About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Pailin!!! I wish there was a KZbinr like you for every country in the world. I need hot Italian kitchen, hot Indian kitchen, hot Korean kitchen… the list goes on you get the idea. I love the way you explain things and even when you explain substitutes or the history of the dish!

That is absolutely my favourite Thai dish! If you took a couple of stalks of holy basil, remove some bottom leaves and put the stalks in a jar of water with the part you removed the leaves from kept covered in water, they will root. Then you can just keep it growing like that (change water every 3 days), or plant it. I’ve done this with many herbs I get from the grocery store that come in those flat plastic containers. I have a row of different herbs in water on my kitchen window sill. Yum!!

I grew it last year in an outdoor pot with partial sun and it produced enough to make pad ka prao about 8 times. Super easy to grow, even in a not so good climate. If your climate is much worse, it should still be able to grow indoors with sun.

Thanks. This is almost exactly what I came to the comments section for! I bought what were touted as holy basil seeds last year, but it was just a ordinary Thai basil. I found a source for fresh holy basil here in Houston, and I was wondering if I could clone it. I've not has much success with with cloning cuttings though. I guess there has to be a first time!

@@aae42 If you have authentic Thai or Vietnamese restaurants near you, you can ask the manager where the nearest Thai, Vietnamese, or SE Asian market is. Vietnamese markets where I live in W. Washington State call it spicy basil, so if you ask for holy basil or kra pao or gapow, they may not know what your talking about.

You're not lying when you say you can make it with any protein. My mom once made it with fish and another time with shrimp/prawn with the golden stuff from the heads. Just incredible.

We have lots of sources for holy basil here in Seattle (I live in japantown which is in the international district) especially at uwajimaya. Outside of downtown central market in shoreline or viet wah (these are grocery stores btw) in Renton is a good go to. As it’s pretty amazing stuff.

Love Pad Kra Pao, we have it once a week, we bought ourselves a mincer/sausage maker at Xmas and decide to make Pad Kra Pao sausages, they are fantastic better than any sausages we have made or any store bought, just changed a few thing from your previous recipes to suit a sausage recipe.

I have it almost daily when I'm in Thailand or Thai-Town in Los Angeles, because it's good there. Here at home I am really disappointed every time I order it, & can make it better at home.

Holy basil is easy to grow in a pot indoors. With an LED grow light on a timer you can set up a bunch of herbs on a counter top or shelf and all you have to do is remember to water them regularly.

I can 100% confirm that it's so easy to grow indoors. I treat it the same way I treat other basil plants and I've had no problems at all. It was easy to start from seed too.

Yesterday, I asked a local Thai chef how she maintains a supply of holy basil, since its availability at the local asian markets can be inconsistent. When she can find it, she blanches it, then freezes it into ice cubes.

I found holy basil at a nursery last year and grew some at home, at least the seeds should be easy to come by just about anywhere. I will grow it again (and more of it) this year. It just grew in a container like any other basil here in NorCal. Something to investigate depending on where one lives. I'll be making this dish later this week, with left overs from a whole chicken I'll be roasting on Tuesday. Yumm!

I love your Pad Gaprao recipe so much, and I crave it often, but I don’t want to go through all the steps sometimes (I grind my own protein in my small food processor, which takes some time. Also my husband needs it milder, so I have to make 2 usually…). I wish I had holy basil, too. But I have some random meats I bought in my fridge, and some basil I bought (more than I needed for drunken noodles in case I wanted something else), so it looks like I can finally scratch that Pad Kra Pao itch today! Thank you so much for this break down, Pai. I’m so excited to make this; it’s my favourite Thai stir fry.😊 (Def going to make the fried egg, too; always!)

The first thing I eat after I land in Thailand will always be pad krapao. Best choice: pad krapao moo grob. And the other day I walked to a market near my place and they had pad kra pao using fried chicken (gai tod) and I was over the moon.

A couple of years ago, I came across a Holy Basil plant here at my local grocery store here in Texas. I was totally shocked to find it. I had only heard of it because of you, so I brought it home and planted it. It grew huge and I got many great woks full of Pad Krao Pao. I lost the plant during a freeze and have not seen another one, but one can only hope. Thanks for the great recipes and tips.

Pad kapow, has my favorite flavor. It's so unique. A lot of places use horapa here because the kapao is a pretty "needy" plant in my state. Once I hear horapa....next 😁

Hello Pailin, Have you thought about buying yourself some Thai Holy Basil seeds and growing them at home? Check out the seeds at Baker Creek, or Rare Seeds. When I'm living in cooler places I grow them in smaller, hydropinc gardens in a room I can keep warm. I even take some of my seeds with me when my work requires to travel longer than or four months.

Well, this is timely. I got one of those pod-based indoor gardens and they had holy basil as an option! I am so excited. It’s just about ready to harvest enough for a batch of pad gaprao and I cannot wait to try the real thing. I’ve been using your “old-school” recipe for ages.

I use a whole garlic bulb, a few dried red chilies, fish sauce and Italian basil. Comes out perfect every time! This is my fave Thai dish of all time!

I've made sooooo many variants of this since discovering your channel a year or two ago. It's been my go to for food prep to bring to work. Luckily I have a Asian grocery store nearby that usually stocks Holy basil, apparently easier to get in Norway than Canada.. But I use Italian basil often too. I vary the veggies a lot, one of my faves are broccolini, the smaller cuter broccoli. 🙂

Oh, I love this dish so, so much. We often make it here at home with prawns. Last year, both my bought bai horapa and my kra pao bloomed (I like to just put it in the water like a bunch of flowers - sometimes it lasts so extremely long, sometimes not at all 🤷🏽‍♀️. I have collected the seeds and hope to grow it in pots in the spring. Much love from Switzerland

This is my favorite Thai dish, and one of my top ten dishes overall. I like mine with chicken, green beans, onions, Bell peppers, and tomatoes. Plus extra sauce! Make sure you're having it with real Thai Jasmine rice.The tomatoes really brighten it up! I used to live in Seattle where Thai food is *everywhere*.

I have Pad Ka Prao every single weeks. Can’t really get Thai Holy basil where I live, so I always use a big bunch of Italian basil rather than Thai sweet basil. This what Thai people really eats, true National dish! Been watching คุณไพลิน for years. Love your videos 😊

Love this! I tried it with shredded chicken. I ran out of oyster sauce so I added a bit more of the sweet soy sauce and it came out so yummy! I added some lemon juice to balance it out. Thank you!

Thanks for this! I love watching people make pad kaprao almost as much as I like cooking it myself. One suggestion: I found when using leftover holiday turkey as the protein, sometimes the turkey doesn't absorb enough flavour from the sauces; making the sauce first and then letting the cooked protein marinate in it while you're prepping the rest of the ingredients can help a lot. Also, it took me many unsuccessful attempts to make this to realize that I needed to upgrade my burner to give enough heat to cook this well. Even now, there's a hard upper limit of about 400.grams of how much I can cook at a time.

I have been wanting Pad kra pao for several years now! My daddy was military RIP. After he retired, he taught defense communication in Saudi Arabia for 10 years. During his RNR, he would visit Thailand. When he came home to visit, he would always take me to a Thai restaurant and this is what he always ordered for me. I tried making this dish once last year. I failed. It was watery and I used Italian basil. The Italian basil had a very strong taste. I will try using Thai basil next time. Thank you so much for sharing your knowledge!

Yum, I make Pad Kra Pao almost once a week. I'm usually adding a veg to it, typically green beans or red pepper. I love your tip about freezing the paste, and also using left over proteins. Definitely gonna try that

Yes you can grow them in containers and just bring inside in winter season. I live in North Carolina, USA and weather patterns are crazy over here. I also have family in Canada and grow their own fruits and vegetables.

I've only cooked the OG version of Pad Kra Pao, which is great, your recipe. The egg is a must but I do a fried hard egg for myself and the classic for my wife. I'm going to try this version. I add some of the chili paste to my rice with coconut milk and stock. I highly recommend it.

When talking about Thai food many ppl will think of "Pad Thai", "Shrimp Tom Yum" or "Thai curry". But this is what Thai ppl actually eat almost every day. "Pad Ka Prao" is the first, and Som Tam is the second. btw กะเพรา (Pad Ka Prao) not กระเพา (Pad Kra Pao) LOL

We eat it all of the time in many Burmese households even though it’s a Thai dish. We call it something like “pat ga pow”

Holy basil is more peppery, so with Italian basil, it helps to add a lot of white pepper.

We grow it here in southern New Jersey. It grows like a weed and then we harvest the seeds at the end of the season. We blanch some, drain it well, then freeze small portions in ziplocks. It works well for stir-fry through the winter.

@@sarathurston3318 Wat Mongkoltepmunee Buddist Temple in Bensalem has a Thai Festival a few times per year. It’s worth checking out. Lots of food, a few potted plants, crafts, etc. Also the Southeast Asian Market at FDR park in South Philly in the summer on weekends. I think I prefer Bensalem.

This, Gaeng Hung Lay, and any curry are the three Thai dishes I make most often. I'm surprised kra pao isn't readily available in Vancouver! I can get it here in Spokane almost every Friday. When I can't get it, Italian basil PLUS a pinch of freshly ground cloves tastes almost exactly the same!

Just made this recipe today, I used regular minced meat and Italian basil. Unfortunately didn’t have oyster sauce on hand this time so I added a bit of Maggi sauce and Tamarind paste instead. Turned out amaaazing . Thank you 😘😘 Kap Kun Kaaaa

Oddly enough, in the north of Thailand, I find they use onion in the Kra Pow often enough. Not always, but I've seen it here (Chiang Mai) a number of times but never in BKK or places south. I told a friend of mine who lives in BKK, and they totally scoffed at the use of onions.

Holy basil is so easy to grow. Just order seeds and grow like basil. I'm in MN and am able to grow in summers.

My favourite Thai dish. And this is from someone who loves all of the Thai curries. This is so much easier to make. Of course I can't get Holy Basil, so I fake it with lots and lots of regular basil. I always mess around and never follow one recipe. Only this: it should be hot, really hot. It should have the funk of fish sauce. There should be so much basil. More basil than you think, because both the volume and taste of it gets much less after it hits the wok. It's soo delicious. Spicy, fragrant, happiness inducing.

Hi Pailin, I’m not sure whether you have garden space but if you have even a balcony or patio, you can probably grow krapao. I found seed for it at True Love Seeds which they say were collected by one of their staff on a trip visiting relatives in Thailand. It’s an American company but they do ship to Canada. There is a red and a white variety, looks like the white is sold out at the moment but there are still seeds available for the red, I’m not sure if there is a flavor difference but I hope this helps!

I saw lots of Thais freak out when they see long green beans in Pad Kaprao, as a mid-30s thai southerner, I see no problem since I see people here put it in their Pad Kaprao all my life. (here you'll find long green beans at least in Pad Kaprao, Pad Kapi, Pad Kruang Gaeng.) The most taboo one should be carrots. It's so out of place. lol

I make mine with Costco rotisserie chicken. I don’t cook with oils, so since the meat is already cooked I add it right in at the start with the sauce on medium heat (I slow cook everything). Sometimes I cook the egg separately and sometimes I make a hole in the pan between the chicken and veggies and add the egg and some of it cooks into the dish which I like. I add 7 Thai chilies for a single serving and double that for a regular sized pan (I stopped using a wok since I don’t cook on high heat anymore, plus a regular sized copper pan is really great).

I just had a look at the 2 videos where you made pad gaprao 13 years ago. Interesting to hear that the basic one just had nam pla and sugar. Ow yes... you didn't age one bit in those 13 years😊
