I have the same question. I am 95% positive the coating for the "gold" stainless steel Apple watches is TiN (Titanium Nitride). In which case one would probably need to use something like Nitric Acid to remove it but I am not positive.

The amount of gold applied is only a few dollars worth - maybe $5-$10. However, most watch plating services (including ourselves) charge about $300-$500 (we charge $289).

We have plated around 2,000 Applewatches and have not had a single one where the gold wore off before the device was replaced by a newer model. We've plated them since the day the Series 1 released. Thanks for your comment!
