Hi Kevin!! Wow how exciting to wake to to this new show!! Kevin it’s my FAVORITE PIE!!! My Babci and I used to go to the Polish bakery across from our Polish church when I was growing up... it was called Kay’s pastry shop and they used to make a coconut custard pie that was to die for!!! Unfortunately it has since closed and I miss this pie so much and I was so excited to see that you did a recipe. I am guessing this tastes exactly like Kay’s coconut custard pie... Hi Jeff!! So nice to hear this recipe brought good memories of your Babci and the Polish bakery! I remember those bakeries when I was a kid and they always smelled SO GOOD when you walked in! Hope you make it - I hope it tastes like the pie you used to have years ago. I have a number of ascots but don't have occasion to wear them too often, so I figured why not wear them when I cook?!? Oh man. Why aren't those rolling mats more common anymore? They make rolling/sizing and transferring the crust to the pie dish so much easier! There are 4 of us in this house, so a pie like this would be gone in a couple days. LOL Coconut is everyone's favourite here. I can't wait to do this! Thank you. :)

I noticed you have a Tupperware pastry guide. My grandmother had one but it is very sticky now. I am afraid to clean it for fear the printing will come off!!! Love your channel!!!

Hi Rob! Those old pastry mats begin to break down over time and can get a sticky residue on them - it must have been the material they used at the time. Glad you enjoy the videos! Appreciate you watching!

Looks good. I always thought custard was with just yolks, and I'm intimidated by the whole separating the eggs so never tried. I used to buy Jello's Americana Custard, which was great for many things, but they stopped making it. Happy Christmas to you all!

Hi Dean! Thanks for coming by from Always Analog! Writing down recipes with that Musgrave Harvest Pro is a pleasure! One of my favorite pencils of 2020! Just bake this pie as shown here but reduce the baking time by about 10 minutes. Then make a meringue and top the pie with it being sure to cover the filling to the crust, and put it back in the oven for 10 minutes or until the meringue gets lightly browned. I had one of those Tupperware pastry sheets which I inherited from my mother. I found it too small and hard to clean so I donated it to the charity shop. I also had the Tupperware rolling pin which was to be filled with water for use. Hated it as it leaked and was nothing like a “real” rolling pin.

Hi wmalden! I use the Tupperware rolling sheet often, and it can be hard to clean because of the size, but I like the markings that help me judge the size of the pastry as I roll it out. I agree about those plastic rolling pins - they were not good! Give me a wood rolling pin anytime! Just got a stainless steel rolling pin but haven't tried it yet. You can chill it in the freezer before using, so I'll see how it does. Thanks!

I noticed you didn't pre bake or dock the crust. Do you ever have issues with the bottom of the crust?

Hi Mark! I've not had any issues with the bottom crust being soft/underdone with this pie. It bakes for 50 minutes and browns nicely (I almost always use a glass pie dish). Unlike a coconut cream pie where the filling gets cooked on the stove top and then put into a prebaked pastry, I like how everything cooks together with this pie. Hope all is well! Thanks!!

Always, always, always, no matter what kind of pie you are making, first of all bake the bottom crust approximately ten minutes. THEN put in the filling and bake for the required number of minutes. Otherwise, you are apt to experience a rather soggy bottom crust. I don't know why some of the You Tube cooks fail to do this. Kevin of Cavalcade of Food sometimes does and sometimes doesn't He seems to be inconsistent in this regard.

Alittle almond extract in any coconut stone fruit mixtures will enhance the taste even a 1/4 tsp. I hate it by itself.
