Thanks for your video. When I was taught to make bakes in Trinidad, and that was before your time, I was taught that there are bakes and floats. What you made, they called floats. Mind you today people refer to them as bakes. Floats are thinner, wider and the name came about because they were deep fried and they floated to the top of the pan. Floats do have a pocket and you can fill them with saltfish, cheese or whatever you like. Bakes are thicker about 3/4 to 1 inch thick before frying and are fried with just enough oil to cover the bottom of the bakes and are turned over when the first side is golden brown. They are not deep fried. The bakes fried in shallow oil do not have pockets but do rise and have a different texture.

Hi, thanks for sharing. We have both in Guyana and it's the same, float bakes have the pocket and bakes are more dense! I think over time it seems we are making bakes less and more so floats and using the name interchangeably. I love bake in any form, with or without the pocket!

Excellent video! I've never seen bakes with coconut milk but they sure do look great!! I always fry mine in coconut oil and I think they turn out really great! I will try your coconut milk version!! Thanks for sharing :)
