I will give this a try, I have to watch the video on making the okra soup, I had it one from a Nigerian friend, it ran down to my elbow when I ate it and they had a good laugh at me, also I could not swallow without chewing no matter how I tried. Guess you have to grow up doing it. I checked you blog and I can find cassava flour here in Barbados. Oh and our nation dish is called cou cou and I'd made with cornmeal and the okra is cut up and cooked inside and served with steamed flying fish.

You can use psyllium husk powder instead of garri. Well done!

Yes for someone who has access to Psyllium husk powder. Garri is more readily available in Nigeria and a well processed Garri is healthy. Example of a well process Garri is Ijebu Garri. They sieve out the carbohydrate, sell it separately as starch then it goes through a fermentation process which eliminates most of the dietary carbs that are not sieved out as starch.

Diabetic people please use cocoyam flour and coconut flour. Reason be that u might not get ijebu garri where u live and you do not know the processes involved.cocoyam is healthier and much available. Thank you for the video aunty I love you.

Well done ma. I don't know one can use garri and oatmeal wow interesting. But I want to ask can one grind the garri with the coconut flour and leave till when need?... And if I want to sell do I need to blend the coconut flour before packaging it? And also do I need to blend the coconut flour together whatever am adding to it, before packaging for my client? had no idea about the oatflour , does not even exist in the store ! And oddly and sadly enough not even in the shop where you can buy " anything from worldkitchen '' , doesn't that say enough ? All I ended up with was FuFu ( small box it is ) , Sambal Oelek , Ginger and pomme granate and other exotique fruits like pineapple and finally , upon my request they had some papaya ! I also asked the guy from the store to get more African but he claims it never gets sold ? so great tip in fact to just grind some oats ! I'll have to make my own coconutflour and oatflour because that man just doesn't want to get it in his shop , but thanks to you again not a problem haha , awesome !! great job you're doin , I have been watching quite some videos of you and I have to admit you atleast explain everything step by step without rushing it , you should ask money for all these wisdom you have on natural , healthy cookinglessons you give ! big fan !

For a diabetic, I will not use wheat flour because it is high on carbohydrates. But if there are no health concerns, you can use it.

Ikechukwu on a scale of healthy, I will go with Garri before I touch wheat (especially that brown one sold in Nigeria) and the last will be cocoyam flour. If you meant wateryam flour then yes. The process of making authentic Garri makes it healthy. The number one authentic Garri is Ijebu Garri that is sour. Thanks for sharing the coconut fufu; but you must research millet, which is the best, most economical and easily sourced grain for diabetics...It is also the most healthful of all grains, next to Teff; an Ethiopian grain...Please, also research the 'Konkonte' which a Ghanaian fufu made with dried cassava meal, used by diabetics, people with delicate stomachs, the elderly and invalids... In my opinion, oatmeal is not affordable in Africa since, it is an imported western product, which is usually agriculturally genetically modified for mass production... We Africans must learn to appreciate our own healthful grains, which are by far more nutritionally superior to western cereals and grains...
