olive oil has a smell and strong taste - so it will affect the taste the cookie. However, if you are used to it and you like it, you can certainly do it. for the jam - you can certainly try it. it's a great idea! :-)

i'm going to try this recipe with all natural coconut sugar (instead of the confectioner's) and coconut oil (instead of vegetable)--that way it makes them much healthier! thanks alia for the inspiration.

This is so nice reciepe! I like so much semoulina in cookies, but I only know basbousa, which I learned it also from you. It became one of my favourite and I make it often. I think this coconut ghriba looks so easy to make and delicious.Thank you!

yes, it should be fine (freeze it after you bake it).

Are we able to replace the oil with Extra Virgin Olive Oil or do you think that will ruin the taste of the cookies? :-) I often bake with olive oil as it is healthier and the flavour of the oil bakes away and is subtle. Do you think it will be okay for this cookie? :D Also, I was thinking, maybe I could press in the middle and fill with a little jam; what do you think? :-) I haven't baked these yet but the jam could add sweetness hoho cheers Alia, I love your cooking.

Alia, are you able to find unsweetened coconut at local stores? I have looked at a few grocery stores and they only carry the dry sweetened flakes.
