i can't write down a recipe. However he seems to make a basic dough adding COLD butter to it and thoroughly mixing it in and he shows it doing the generic "window pane" test before rolling and folding it a few times then doing a butter layer (adding butter and flour together and rolling it out flat) he stacks that inbetween 2 batches of dough (doing it on quite a large scale) and folds and rolls it 3-4x similar to how he made the first dough before finally adding what i'm honestly unsure as to what the darker layer is for color (could be fondant... pretty sure but obv can't say) The filling seems to basically be a coffee bean hazelnut and almond mix that he probably reduced down following a "peanut" brittle recipe and then turning that into a cream in a food processor using a bit of butter and milk to make it more creamy (this is my best guess a a aspiring pastry chef i can't write out recipes for all these things but you can find plenty of recipes for croissant dough and the brittle online and id be more than happy to see people add to this in the replies if maybe they know more than i do)
