I know a roastery that specializes on canephora. Their main roasts are omni-roasts, but I feel like it tastes just right. Maybe it's just a side product of that kind of roast bein good for those beans.

I'm just a home brewer (I use the april dripper), the last time I bought a decent omni-roast was a very intense co-ferment that you couldn't really go wrong with in terms of strength of aroma. That being said, I can only drink a co-ferment about once a week, no more than that, because I find it too artificial. However, I mostly just end up hating omni-roasting every single time. Offering a specific roast for filter should be the norm for every specialty coffee establishment, it makes for a clear and tasty cup of coffee that you usually don't get otherwise.

How do you feel about making 2 roast profiles of the same coffee - one for black (filter and espresso) and one for milk (flat whites and, god forbid, filter + milk), as opposed to filter roast or espresso roast. I.E: having X coffee available as (more suited for) black or white.

Good to hear from you Ben. In our world there needs to be another level of profiles separating filter and espresso. We do have some coffees that have three profiles, filter, espresso & Milk Espresso.

Hello. Good video, good content. Providing a couple of different roast profile per coffee can also help in having more different products. I usually do an omni roast, but that is base off of currently using an air roaster. Soon I'll be on a drum roaster to where I can create repeatable types of coffee for the right situation. I also think that all of the different types of roasting depends heavily on the clientele you are going after. Some people are more prone with coffee being "coffee", but you have people who seriously take pride in the little things that coffee can offer. My question to you, how far do you go down the customization of the roast? Meaning, if you create a "filter" coffee profile, do you create a chemex, immersion brew setup, too? Because not every roast works well for all filtered type of coffee.

Patrik, thanks for the reply and explanation. You bring up a good point of having different roast base on filter vs. espresso. Because the pressure part of espresso brings different flavors, for good or bad, depending on the roast profile. Are you having success with educating your customer base on the differences of roasted coffee, depending on the filter vs. espresso roast?

Hi there. I want to ask about roasting technique. Let say I roasted i roasted two 1kg batches of ethiophia yirgacheffe. The first batch i use slow roast technique. The second batch i use fast roast technique. Both finished with the same level roast (medium roast). Which one is more acidic and which one is more sweet and has more body?

If both of your rosts ends up with the same color (by measurement) it won't be much difference in taste.
