As someone who is currently in culinary arts I can say she is right. As someone who just got out of high school very few people in my classes wanted to be a chef their entire lives. Most of these people are middle aged and have just settled in because they have worked for a long in the business.

There are a lot of free classes, I took Japanese lessons for 6 months and it was all free. It was by a university student who was studying to be a teacher in Japan and wanted practice and it was good fun. There was only 10 of us and was super relaxed and made a few friends from it, so I would recommend to everyone just look for free lessons or trainees that want practice in anything and just go for it.

It is still having those negative effects. The increased prices makes poor Bolivians can't afford quinoa so they have to eat alternative foods like rice and pasta which have a much lower nutritional value. The prices also makes more and more people grow quinoa, which sounds great, but it's not. Previously the cultivation has been sustainable, with natural fertilizers from the llamas that used to graze most of the land. But since more and more people wants to grow quinoa, there is no room for llamas so they are being sold and synthetic fertilizers are used instead. This threatens the sensitive soil and the entire eco-system.
