Fats are too complicated to subject to try and cover in a single reel, so there will be more videos on the different doubts that people have about cooking oils. This one covers one of the most common dilemmas - Cold pressed vs Refined oils
Cold pressed oils tend to be more aromatic and may include some of the beneficial antioxidant molecules from the plant source. BUT, it’s important to remember that anything that is not a fat (a triglyceride) will burn at high temperatures. If you are going to pay a lot of extra money for a cold pressed oil, you’d be wasting it using it for high temperature cooking methods like finishing tadka or deep frying (cold pressed mustard oil is an exception). On top of that, if the oil is not properly filtered, some of the non-fat plant matter will burn into not-so-healthy by-products.
This is why we refine oils. Some sources of oils like sunflower simply cannot be cold-pressed because the oil will not be suitable for human consumption without refining. Refined oils go through an elaborate filtering and chemical treatment process that removes everything other than fats. Some of these solvents (like Hexane) are not good for health, but the right question to ask is - how much of it ends up in the actual oil. FSSAI has standards for what is the maximum allowed ppm (parts per million) amount of hexane and there have been studies showing that most well-known brands of refined oil do not have statistically significant amounts of hexane in them.
Verdict: Use the right oil for the right situation. Cold-pressed for low temperature, light sauteing uses where the aroma of the oil is important to the dish. Refined oils in high temperature situations (like finishing tadka and deep frying) and where the oil needs to be neutral tasting so that the flavour of other ingredients stands out.

True, i do use both , for normal tadka or talimpu i use cold pressed oil, for frying i do use refined oil, best of both worlds

@krishashok this was very informative video, now I know why when I cook using cold press oil taste different! :) Also I got a question to ask, does the storage way makes any difference in quality or preservation of oil? Like plastic bags, bottles, glass or metal containers [ usually olive oil comes in]

Plastic can leach into the food over time, especially if exposed to high heat (like microwaves). Some metals can react with acidic foods like tomatoes, so I'd prefer glass containers where weight is not a concern. Olive oil and wine come in dark glass because light can break it down into unpleasant byproducts, this shouldn't be a problem if you store them in a cool, dark place as @KrishAshok mentioned.

There are many articles indicating increased risks of diseases linked to consumption of refined oils. Obviously there is an aspect of adulteration of oils. That apart , apparently refined oils have PUFA and it causes more problems. Any unbiased studies and recommendations available ?

No such thing as an unbiased study. But I firmly believe that virgin cold pressed oils (mustard for sharp flavour, coconut for sweeter flavour) are better, and if this is too complex, just use Ghee. Works wonderful.

In major oil categories, cold pressed things are best. And there are a few seeds, which release aflatoxin too readily, they need to be refined but refining just takes out the major nutrients and it is the 100 percent truth. Aadha gyaan haanikarak hota hai af

So very high temperatures can produce a small amount of trans fatty acids in all vegetable oils. It doesn’t matter whether they are refined or not. But to be fair, you are likely getting more naturally occurring trans fats from animal fat (eggs, dairy, beef, mutton pork etc) anyway so this is not a big concern if you aren’t deep frying food every single meal and consuming a lot of it

Changes in saturation of fatty acids do occur. Trans fatty acids start forming at 220 C and form exponentially above 240 C

Krish you said that high heat destroys antioxidants in oil but at the same time are ok with high heat extraction during refined oil process?? Also there are research in the west that refined seed oils are harmful compared to the cold pressed version, see Dr Eric Berg channel. Not sure why you are so confidently suggesting refined oil over traditional cold pressed? 🤷‍♂️🤷‍♂️

Antioxidants are added for outside during refining like BHA, BHT, TBHQ of which the first two are proven to be carcinogenic. Natural antioxidants like tocopherols and tocotrienols get lost during refining especially during deodorization process above 260 C.

Can you please make a video on mustard oil, please? As you might know, mustard oil is banned in the UK, EU, USA and Canada for consumption and the packages have labels of 'external use only', due to the high erucic acid present in the oil. But as South Asians, we still use it in our cooking. Should we avoid it or it is just another issue like MSG?

​@@hiya3076it's because it contains toxins which people remove by giving it a burn. Thus the stink. Many people who are not used to mustard oil can throw up. I used to do it as a kid. Still can't stand the stink.

Please keep Omega 3 & Omega 6 proprotion in mind. It should be 1:1 . Seed oils tend to be majority omega 6. Omega 6 is inflammatory.

We used cold pressed ground nut oil in my home for cooking because of that I faced some gastric trouble and switched to refine oil now I feel comfortable 😅 it is like we never know what is good or bad.

Might be you have too much pitta in your body. Groundnut causes pitta. Purchase and try somewhere else. They should dry the groundnut well. Whenever i eat peanut chutney after my delivery I have diarrhoea. Before it was not like that. So the problem is with my body and not with the peanuts!!!

Refined oil may not cause you gastric trouble but will slowly but surely lead you onto inflamed arterial walls. Switch to ghee or butter.

Refined oils sold in the market are not healthy though Krish says they are not harmful. 80% or more oil base in that 1 litre oil is extract from fuel oil refineries which will have 0 nutrients or minerals which is why they are sold at less price compared to cold pressed ones. Cold pressed oils are raw and have more fat hence use them in moderation...

@@poojaravichandran1665 yes, that has nothing to do with refined or cold press, it's just property of a particular grain oil to do that beyond a certain point. Actually, in refined oils they try to make that point higher as much as possible via chemical, it's a case of replacing one bed with another.lol

I'd like to add a category between "cold pressed" and "refined": hot pressed but not refined. That's how rapeseed oil is traditionally made in the Spreewald area in Germany (southeast of Berlin). They use these seeds, roast them for giving the oil a "nutty" aroma and for easier extraction and press the seeds then. As there are many local producers there (from single-person-manufacture to industry) the oil of each of them has another color (from light yellow to an intense brown) and another taste. It's traditionally eaten with ("peeled") potatoes, creamy white cheese and onions. 😋

This is a very tricky subject, there are many oil seeds in India, taste palate is different in different regions, for e.g. I use ground nut oil and coconut oil for cooking.. til oils during winters or cooking chettinad dishes.. refined or not is palm oil good? Oil vs. ghee this is a never ending argument.. I have settled for cold pressed oil from a small processing unit near my house.. I can't trust branded packed oils simply coz what gets mixed or even the quality of their processing units etc.

Post frying, let oil cool down and then filter out all particulate matter and then you can reuse it for mild, sauteeing use. Avoid deep frying again in the same oil

They are fine! In general, cookware plays very little role. People just end up focusing too much attention on them. Focus on what you eat, not what you cook it in

As far as I know, This filtered oil can be used safely for things like cooking dosa, dosai, ooththapam, etc , but NOT for deep frying.

Dr nk sharma says whether ur oil is cold pressed mustard anything just cook for two minutes it is tolerable if you are cooking 30minutes you are eating same kachori samosa every day . So oil should not be used once . It becomes carcogenic when it heated

Winterization, deoderization, plasticity etc. are technical terms-it doesn't help to throw them around without knowing what they mean. As for the other oils you mentioned, petroleum isn't edible, so I wouldn't use it in food, although I wouldn't put olive oil in my car either. There's nothing especially harmful (for health) about palm oil, but the overwhelming majority is grown in Malaysia and Indonesia, where they slash and burn precious rainforests, displace indigenous people, and use indentured servants for labour. But you'll have a tough time avoiding it because its low cost and suitable properties means that it's used in numerous processed foods and other products like cosmetics. In chemical refining alkali neutralization is done along with degumming, bleaching, winterising(optional) processes. In physical refining alkali neutralization or caustic refining is not done, the gums are removed by steam stripping.

Because they buy directly from source and usually even the "bad" seeds end up in the mix, as the dude said above, it's refined, so no bad taste or bad flavor will be left over. So basically they can get millions of gallons from the stuff which is not even in good condition in their raw form, or even edible for human at that point.

Yes and no. You have to select the proper oil. Like coconut or mustard are bad since coconut oil has saturated fat and mustard have high erucic acid.

Refined oils are fully of poly unsaturated groups which tend to make them prone for oxidation. In the body they can oxidise and have the potential to form cross linked structures in found in high enough concentations. An example would be lining the arteries with plague. This is essentially made from cholesterol produced by the body from the fats we eat. Plague is often swollen and gel like. Thats a fat swollen cross link lipd gel. Processed seed oils may well be part of the cause.

Animal fats (ghee) for cooking along with avocado oil, coconut oil, mustard oil with high smoke point and low linoleic acid are much healthier than refined vegetable oils

You can use cold press Extra Virgin olive oil for frying etc as it doesn’t damage at high temperatures and it’s very very good for you!

Reined Oils have huge disadvantage in the way they are processed .I would suggest stick with cpld pressed coconut oil ,seasame oil or ghee .

Cold pressed oils are exorbitantly expensive. I just saw an advertisement for cold pressed groundnut oil and it was in the range of Rs. 350-400 per litre.

@@swapnilsonawane9874That is becos we all fell for mass produced packaged oil of big companies & local traditional cheap oil Ghaana ( mills ) went extinct due to no demand, now we are reintroducing this cold pressed by again commercially big marketers. So this is the trick finish local skills & vendors then introduce costly products of same items .

Dont fall for such videos. Any chemical which is nonorganic is going to harm your body. The studies are conducted by oil industries which are super biased based on the group of participants. In India, people are facing heart attacks and one of the reason is refined oil. Think it like, you need atleast 2kg ground to extract 1lt of oil. This means in 320 rps you can get only 1lt but if you see DMart price for ground nut oil its 170 rps/lt that too branded including margines that means actual product cost would be aromd 90 rps/lt. This is a clear sign of super adulteration allowed by our gov only.

You didn't talk about the quality of fat. The smoking point, why oxidation is a problem and so on... You're giving half knowledge which was not expected. And one more thing the fortified vitamins can easily destroy in high heat, & in the cold press oil the antioxidants doesn't oxidise in medium heat , right?

The technology of refined oils are pretty new. What do we used to use before that? 'Cold pressed oil' which has been used for Millenia. The rates of heart attacks, BP, Diabetics is much higher now than before. Old is always gold when it comes to food habits. Will leave it here.

High temperature is the main problem. If you are using oil on salad dressing or mild sauteing cold pressed oils may be healthier as they have additional components like antioxidants from the plant. Refined oil is better for frying as it is only fat and can withstand high temperature. However, it can gradually get destabilized so it is generally not recommended to reuse frying oil. But again, this can happen with cold pressed oil as well 🤷🏽‍♂️

There is no way to find out. People make a big fuss of the local oil presser cheats giving a lesser quantity oil but some how trust companies to provide with quality oil. Oil is large part of good health if done right. Just go the old fashioned way and trust the local oil presser who will cheat only in oil quantity which by the way easy to identify before gets into your health.

It's banned more for economic reasons than scientific. Some very inconclusive rat studies in the 1970-80s showed erucic acid (present in mustard oil) as being bad for health and they banned it in favour of a genetically modified version of rapeseed (similar to mustard) from Canada (rebranded as Canola since rapeseed had branding problems), and since then, we know that mustard oil is quite safe given its wide use in south asia but canola oil just has too much lobbying power so the ban stays

Have you used both for same purposes, compared your health after consuming both separately for a period of time. Why we always need studies to tell what is right and what is wrong. Do a study yourself and come to conclusions. My personal conclusion is, Best is ghee, then cold pressed oils and then refined.

Guys, cold pressed oils holds natural nutrients, our body uses them to break down nutrients and digest the oils and convert them to saturated fats while refined oils are light and holds no nutrients which means when it goes to the body it just acts as an overhead beacuse it cant break them so they deposit as fats rather unsaturated fats which acts as garbage for our body, our body understands the language of nutrients it does not require any sort of oil, veggies or cereal it is only bothered about vitamins, proteins, saturated fats,good cholesterol, fibres, minerals all these catalysts are required for blood and cell formation which contributes to our healthy metabolism and increase your productivity in the long run.

Bad info with very good quality english. This misleads viewer to think refined oils from supermarkets are good. Cooking with refined oils which are available in indian supermarkets is the worst thing u can do to your body. even worse than eating sugar. The author should look into how health has rapidly deteriorated in india over the last 2-3 decades. heart health, throid health, diabetes etc.. . i request the author to research top 3 factors for such decline. and a video on that would be nicer.

Would you happen to have meta-RCTs that positively establish the causative connection between refined oils and heart health in India, or is it a case "trust me bro"? In general, I think the public should go with scientific evidence and not gut feelings about what single villain of the day is the cause of all our problems. Excess fat consumption of course is a problem (and that is called out in the video) but to then say that only refined oils are the problem but not unrefined oils is just speculation without evidence

Indian cooking conditions subject oil to very high temperatures, like in deep frying during which the oil temperatures can go above 170 °C. It has been demonstrated that refined oils with high PUFA, can degrade easily to toxic components like free radicals, transfats, melondialdehyde (MDA), etc., which are potentially mutagenic and atherogenic.Repeated frying of the oil can further damage the oil and produce more toxic components that are highly harmful to the heart. Refined oils are purified oils from oil cakes using highly intense mechanical and chemical (solvent extraction) processes to extract the oil from the seeds and vegetables products. The crushed seeds are heated repeatedly to high temperatures up to 270 °C in a steam bath for deodorization and to start the oil extraction process. These high temperatures can result in loss of antioxidants (like tocopherols) and sterols, produce free radicals and TFA, and polymeric components, which are potentially atherogenic and mutagenic.
