Very enlightening. Thank you so much. I usually mix multiple millets soak them overnight and make idlis in the morning along with onion chutney and hot strong bitter filter coffee. Most times the Idlis are hard not soft in comparison to white idlis. But I like them anyway.

As a species, we should be vegetarian. Occassionally eating non veg. Carbohydrates are plenty now. Veg protien is abundant. Fermented foods easier than ever. Eat veg but local. For very cold climates, eat non veg. For coastal places, eat fish. But only meat three meals everyday will kill you. Eskimos eat meat. But they must eat it thrice a week max. There are actually 3 kinds of photosynthesis CAM photosynthesis is where plants only take in CO2 at night. There are of course other intricacies to it, but that is the gist of it There is even C2 photosynthesis which is essentially the transitionary phase between C3 and C4 And thats just plants. Rice was eaten only on festive occasions and where there was abundance of water. Now, bore wells are dug and paddy grown everywhere. So too Sugarcane. The wells have gone dry, ground water is at dangerous levels. We are ruining mother earth. We will not have water to even drink. Viewers I request you to use your own logic and reason, the youtuber to close his channel. Save the earth. Eat less rice ( I am not saying don't eat rice) and eat more millets which WAS THE STAPLE FOOD. NOT RICE. Even now in many parts of rural India they eat only millets . The millet craze started in Kerala recently, but I've found that most people love their rice and are reluctant to switch to millets. I am obese with normal biochemical parameters and have faced constant body shaming. In order to shed the excess weight I switched to trying a variety of millets once a day. That was in the form of idly, dosa, pesarattu, Thalipeeth puttu, nool puttu etc. Instead of having GI issue, I ended limping. My friend an ayurveda doctor advised I go off millets. I have a supportive family who love trying new recipes along with the traditional ones.

Sattvic movement is more of an extremist view on ayurveda. Fittuber is more of a popular approach to ayurveda. It hasn't been anything new for me, who had a habit of reading ingredients since my childhood and dabbled in ayurvedic practices. I dont recall fittuber dismissing allopathic medicines anytime in the past. We simply have to follow ayurvedic practices in general, and turn to allopathy when anything urgent needs addressing.

The classification of foods as Satvic etc might be thru thousands of years of experiential learning and not attributed totally to the current chemical ingredients in it. Indian ancient systems use experiential learning to use to understand and classify. We don’t know how the process worked. We can’t judge those purely by current reductionist scientific processes. Holistic understanding can only come from more holistic research.
