@@jhamelin119 I agree with your main idea here. I think though that your being freaked out here is due to lack of understanding of the things you're mentioning. A lot of meat substitutes are created in restaurants and then refined in a "lab" to reach a larger set of consumers. Not to convert people to veganism, (though there are those out there and too many of them) but mostly as an effort to preserve balance in our ecosystems and be more sustainable. I'd highly suggest that you look up David Zilber, he's one of the former head chefs of NOMA past #1 restaurant in the world. He is a huge promoter of plant protein, though not a vegan. He is phenomenally intelligent and does an excellent job explaining why plant based proteins are actually important to humanity and also does a good job de-mystifying lab techniques in food (he ran the NOMA fermentation lab for years) P.S. I hunt and fish, but eat mostly plants.

I went to Mexico last November and this episode really reminded me of my trip. I shot quail and cottontail in AZ, went to Mexico and cause lobster, snails, varieties of fish, and clams. A woman living in a shack taught me to shuck the clams, a man showed me how to break down lobster, and I cooked a variety of foods for the natives. I made white people food: quail stew, lobster bisque, and some Mexican food: green chili rabbit, and suviche. It was an amazing trip and the notices loved everything, especially the quail stew.

They commented one time that the only thing they really missed living in AK was fresh tomatoes. My folks happened to have a huge garden and we decided to trade fresh tomatoes air shipped for king crab legs. We sent them 50 pounds of garden fresh tomatoes and they shipped us 20 pounds of king crab fresh off the boat. Hands down the best ever!

Tip for extending freezer life of seafood such as prawns, freeze them in a container or bag full of saltwater. Freshwater will work but saltwater is better. 😉 And yes they are called prawns. We do have shrimp in the North Pacific and they are big as well. Coon stripe shrimp, humpback shrimp, etc. but Steve was catching spot prawns not shrimp.

I've lived in Alaska most of my life and have never seen anyone take a machete to a crab.... But, the end result seems the same. As for the clams - A Tlingit elder once told me that when they started hearing the hooters (blue grouse) they knew it was time to quit harvesting bivalves. The red tides typically start in the spring with warmer water.

People don’t realize in Alaska it isn’t easy to get all these. We can’t even crab in Cook Inlet or around here except a small window in Kachemak bay. And we can get spot prawns but not in a small aluminum boat cause water up in this area is too rough for that. We get salmon rockfish and halibut but shellfish are harder to come by and we don’t have fresh seafood markets because foreign owned processors sell all our stuff over seas and other places
