Thanks for the video, Richard. There's no need to apologise. Family comes first. Looked a good meal. I must give ostrich a go. I boiled and sliced beef hearts yesterday. I've just air fryed the heart strips, and I'm having them with mushrooms, spinach, and egg noodles. Thankfully, or my stomach would be rumbling watching this. Thanks again.

Welcome back to the "wild". I prepare food at home, vacuum seal it, freeze and reheat when I get out in the bush. Is it possible to cook the ostrich steaks by immersing the bag in boiling water? You could steam the spinach on top and then use the water for your spuds, a one pot wonder meal. Just a thought. Curries and rice, in separate bags, stews, osso buco, lamb shanks, served with pre-cooked mash, separate bags of course. I've prepared other root vegetables but nothing delicate like spinach. I generally do 10 meals at a time, keep in the freezer until ready to go. Heavier than dehydrated foods but they all "cook" in the same water and clean up is a breeze. Might try gravy next.

Yes. All that is possible. Regarding the ostrich steaks: they are cooked already (see Sous Vide Technique) and just needed the charring/heating through. I think ‘boil in the bag’ would leave a lot to be desired - so much flavour added with a gentle fry. Also, I try to avoid single use plastics whenever possible.

@@RichardOutdoors Been thinking about what you said. I'm with you on single use plastics and will avoid them when I can, the vacuum sealed bags can be washed and used repeatedly until they become too small. I think your potato came in a single use plastic bag and the gravy can would have a plastic lining. It would be interesting to work out the net "global warming effect" for both methods. The missing "sear"? I wonder if a seared steak (et al) could be frozen, reheated and retain the full "sear" (maillard) taste and texture?

Ahhh! Nice to see you!!! I so admire those of you who continue to slug it out in the cold weather and keep making content. But it's also totally understandable for those who take a break.
