COLLARD GREENS WITH RAISINS + ONIONS RECIPE
1 tbsp extra virgin olive oil
2 onions sliced into crescents (about 4 cups)
3 cloves garlic minced
3/4 lb collard greens 6 cups
2 tbsp raisins
INSTRUCTIONS
Remove stems from collards and finely chop them up.
Pile the leaves on top of one and other, roll into a fat cigar, and thinly slice into ribbons.
Heat olive oil over medium heat in a large non-stick sauté pan. Add onions and sauté, stirring often, for about 15 minutes or until onions are golden brown. If onions begin to burn, turn the heat down.
Toss chopped stems and garlic into the pan and sauté for another 5 minutes or until stems have softened.
Stir in leafy greens along with 1/3 cup water into the pan. Season with some salt and pepper and cook for about 5 minutes or until the greens have wilted.
Toss in raisins and cook another 2-3 minutes to allow the raisins to warm up. Adjust seasonings and enjoy!
NOTES
Store cooked collard greens in a sealed container in the refrigerator once completely cooled. They will keep for up to about 3 to 4 days.

A tip for using collard leaves as sandwich wraps is to steam them for 1-2 minutes then plunge in cold water, then pat dry. They’re more pliable and less bitter.

Had the good fortune of receiving fresh grown NC grown vegetables and blueberries today. Yes, In January! Came across your video tonight. Four years old? Wow! Thanks for all the info. I think you could be a sister I never had. I love dark green leafy vegetables. Honestly ALL vegetables. Been in NC 10 years and love collards. Using them in soup this week. Thank you! Very informative video🥰

Bought some collards bc I knew they were a great healthy addition to a week’s menu but had no idea how I’d prepare them. I wanted to do something that didn’t involve the traditional southern way of adding less than healthy ingredients. This was a perfect video to inspire & get me ready to do something with them. Thanks for being a reliable resource in my cleaning eating/cooking journey!

This is really helpful. We have taken over a mature veg garden and there are a number of collard plants. I had never heard of collard until an American friend said how popular they were. I tried cooking some tonight and they were over done and crispy, I threw some salt on and it was like crispy sea weed texture, still tastes good so I wasn't mad 😊

I'm from the desert southwest region so the only times I had collard greens was when I went deep into the country in the Midwest in ILL. and my cousin threw some on my plate. Another time was when I went to my friend's party and his mom was from the south and made a big pot of it. Both times it was the most flavorful delicious green leaf that I've ever had.

I never liked the hours long recipes with ham hock etc. So yesterday, as usual, I searched the internet for recipes and came across this one with the raisins a real keeper! Quick and easy. Hoping to get it in my share again this week so I can make it for my daughter. . Thank you Have any special recipes for red kale?

This recipe is outstanding!! I cooked some black-eyed peas with a large jalapeño cut four ways with some parsley and then strained off the pepper and parsley and served with the collards! I might try adding the raisins next week. I was so surprised how much the flavor transformed after cooking. I tried some raw and that was a really strong flavor, but after cooking, wowzers. Yummmmm!!! Thank you for this delicious addition.

I also just chop them and add them to soups, pasta, Asian dishes etc. Also chop out the stem and use as a wrap for good fillings like Peking duck, Mexican etc etc. Of course, like kale it can be seasoned and microwaved and that dries it out to be like Chinese restaurant 'seaweed' also. (Its not real seaweed usually that you buy!) Many uses. Best wishes from England.

Collards are more traditionally desired in the autumn and winter here in the northeast. They are especially good once the frost has hit them; so everyone rushes to pick them up the week after the temperatures drop! I read that the slivered cuts and steam cooking is more popular in South America, and I tried it several years ago. It helps to quicken the cooking process, but doesn't leave that delicious "pot likker" I love. Never tried raisins. I guess it's similar to putting cranberries in kale salad (which I love).

I’ve never had collard greens so, I think I will try the sautéed recipe first. I really enjoy watching your videos and have tried a couple of the recipes. Also, HAPPY NEW YEAR

I grew them in my garden (it's winter now though) and they're easy to grow.

Hi Dani, would love it if you could do a video on a “healthy” take on cabbage steaks (without the full stick of butter!). Love your channel!

I LOVE your Ingredient 101 series! So glad that you've brought it back! With Valentine's Day around the corner, I would love to see an ingredient 101 on cacao powder - is it really any different/healthier than unsweetened cocoa powder? Thanks for all you do - I love your channel!

Dark, leafy greens are one of my favourite things. Unfortunately in Australia collard greens aren’t really a thing; thank goodness for kale & silverbeet. Thanks for the video & the delicious recipe & best wishes from Sydney, Dani.
