Endearing lecturer... yes, he is delivers slowly, but he is talking extemporaneously... no notes, it's all based on his knowledge... very impressive.

The book " Soup for the Qans" that Prof. Bulliet is referring to is evidently not about Mongolian cuisine. Please be assured that real Mongolians get their proteins only from sheep, goat, cow, camel and horse. Occasionally we eat wild deers and gazels. It is sad that Khubilai Khaan suffered from obesity, which might be mainly caused by eating foreign food.

In the first book, foods that ranked higher were delicacies. Foods that ranked lower were common and cheap. Just like today.
