This reminds me of "funeral potatoes ". Another recipe along this line is Swiss rosti. Both are yummy. I have had a version of your recipe too. I loved it.

This is one of my favorite dishes my Mom use to make. Sometimes she would add diced ham or cooked sausage in it and she’d call it a “Breakfast Casserole”. Brings back memories. She’s been gone 28 years today, October 13th.

Thank you for your videos. I look forward to watching them. Instead of plain old sour cream, I use French Onion sour cream dip .... like the potato chip dip. And I make it a loaded hash brown casserole by mixing in chopped crispy bacon pieces. Now I'm hungry lol

Sounds wonderful. I make a chicken casserole that uses plain crushed potato chips on top. I always use sour cream and onion flavored potato chips. Makes a tremendous, delicious difference!

I got this recipe from a friend close to 35 years ago and know it as "Funeral Potatoes". It's pure comfort food. My tweak to it is that I add 1tsp garlic powder and 1/4 tsp celery seed. I have added diced ham on occasion but basically just leave it as is. When I take it somewhere there are never any leftovers. I can see that you wear out your spatulas the way I do. Every last drop, speck or whatever comes out of the can or bowl.

Some of the recipes I've made for years, but I have enjoyed revamping some with new ideas. I noticed you were using the Ore-Ida brand potatoes for your hash brown casserole(no dissing that brand), but have you ever tried the Simply Potatoes brand before? They are usually found in the cold section and they are never frozen, always ready to use. They are good for this casserole as well, my opinion. Let me know if you have ever seen them or thought of using them. You guys have a Blessed Day!!😊

Love this recipe , it is so versatile. Most people call it Funeral potatoes , our family calls it yummy potatoes. We have always used diced green onion. I’ve know people who crumble potato chips on top .its yummy however it is made. When I take it to potlucks I always come back with an empty pan.

I grate the onion, use the onion and the juice. I use cream of mushroom soup and top with 2 cups of crushed cornflakes rather than Ritz crackers. My Mom, God rest her soul didnt like chicken soup, so I changed it and used mushroom soup. One if my friends uses cream of celery soup.

Oh, my goodness! I didn't think you could take a bigger bite of anything until this video lol! You spend so much time lovingly preparing these dishes--setting out all the ingredients and giving detailed instructions, which is great. Your videos are superbly done--you are a great teacher, and Melissa is excellent with the videography. This is good enough to be on network tv. Please take your time and savor the food. Try to take "princess bites" yourself--you'll be satisfied with one serving. Wolf it down and you'll always want more! If we took half (or even 1/4) as long to eat our food as it took to make it--wouldn't that be something?

Made this recipe last night. I added a fresh seeded and chopped jalapeno to my onion and sauteed in butted on stove top. Followed remaining recipe as written. This dish is comfort food for me. Funeral potatoes! That’s what they are called in Utah and Idaho! They are ALWAYS served at Mormon funeral gatherings!!! Yummy!!

Just made this last week. It is a meal by itself. Except I had heard it was made with corn flakes, and didn't want to buy them just for the one cup needed. Think I will try the Ritz Cracker topping, sounds good. I use the extra sharp cheddar cheese, and I really prefer that. Like you say, change anything you want. I watched six of your shows in a row! It's the middle of the night. oh well, I am retired. Love your recipes.

Here in Wisconsin, we make a very similar casserole, Potato Casserole", the only difference is we use the cubed frozen potatoes and the topping is crushed cornflakes mixed with a little butter to make the topping(not the frosted just plain). Another name people call them is "party potatoes " because they're so delicious to take to a party! Thanks so much for sharing!

My family has made this for years!! Although We have a couple of onion haters in the fam so we have to grate the onion to hide Them!! We add slightly more hash brown than you did again to hide the onions!! We use cream of celery instead of cream of chicken!! We also add crispy bacon!! And we use a mix of crushed up Ritz Crackers, Oyster Crackers and Cornflakes with butter on the top which really does make a difference as its a multi textured crunch😉 Such a good side dish!!

I hate onion too, for a reason. I was invited to to my boyfriends house for dinner and they ask if there was anything I didn't eat. I said, onion, it makes me sick. The step Dad was a high end chef who was well known. The meal was delicious and very impressive. But that night I woke up at 3 am sweating and feeling nauseous. When I tried to get up for work the next day I started throwing up, I was dizzy and couldn't go to work. So I missed a full day of work. My boyfriend called me and I said how sick I was. I threw up until everything was gone just like bad food poisoning. He said he felt fine but he'd check on his parents. He called me later and said they were fine. That weekend he went to their house and his mother ask how I was. He told them I missed a day of work and still wasn't feeling 100% after eating their dinner. She confessed it could have been the onions. Yes, the 2 onions that the stepfather finely minced into the potato casserole he made. He minced them so I couldn't see them and them served me a larger than normal portion. He seasoned them, added sour cream etc so you couldn't really taste them and I don't dislike the flavor, they just make me sick. He did it on purpose because it was all in my head. My boyfriend was very mad and told me. I was livid. I had suffered before during and after I threw up 7 times. I liked him but I could never see myself married with wicked in-laws like that, so I broke up with him. I heard he wasn't speaking to them for a long time. So when you want to be a A Hole and slip something in someone's food because you think it's stupid, you might not know if they just say they don't like it or they are allergic to it. Expect if you send them to the ER to pay the bill or be sued, A Hole.

Our dear friend’s mother made this and I loved it! I asked her for the recipe and she hesitated. She said, “Don’t tell Shawn what is in it.” He loved her hash brown casserole, but he wouldn’t eat chicken. She never told him it had cream of chicken soup! She is a mess! She loved her boy. Shawn passed from brain cancer 2 years ago. He is dearly missed.

I just made this and it's good... but I think I will make a few changes next time. Half a stick of butter melted with onion in microwave and the other half stick with the cracker topping. I would cut the sour cream in half... just a little too much sour cream for my taste...I'll let you know how it works out with my changes.

Leave out the sour cream and replace with mayonnaise.

I like sour cream, but I don't like the full taste of it in the casserole so I would probably use half the amount and replace with mayo.

I've done this casserole quite a few times but with corn flakes like another reader mentioned, but I've never thawed out my hashbrown and had the same results. Delicious!
