A word about this kind of sharpener. The design and instruction was catered for linear edge and not for curved edge. However we can do curved edge with some change in the instruction. Changing from linear stroke for the linear section and add a curved stroke at the end. Such that the edge line is perpendicular to the carbide face. That is lifting the handle starting from junction changing from linear to curve. To practice use lighter down pressure with increased stroke count. Hope this help. Detail1 : when the edge line is not perpendicular to the carbide face the effective angle imposed by the carbide at the blade body becomes smaller so the cutting edge is lifted above the V shape carbide. By tilting the handle tip up approximately by the end of stroke the adverse lift can be removed. Detail2 : the same argument goes to the two step instruction for linear only blades. Step 1 creates a blade body angle slightly larger than step 2 which is what we desired. Detail3 : this kind of sharpening method usually produces a wave profiles along the cutting ridge but the wavy ridge has poor structural strength wear and break off sooner than triangle tooth profiles of whetstone method. Whenever possible used whetstone for sharpening to benefit from ease of cutting and blade-edge longevity. If you own a discontinued knife model this can help treasure it.

The OPINEL is beautiful ! My favorite numbers are: 9, 10, 12. I edit them with musat LANSKY No. 800. Manual sharpeners do not make it possible to qualitatively correct the very tip of the blade and its beginning. Thanks for the video.

Diezelle, Not always but sometimes the pull through sharpeners are directional. the side with the hand symbol is that the side that your hand should be on ?

I will try ... Indeed, all these systems (and there are many) do not work wonders (razor blade) and do not replace the very laborious sharpening with sharpening stones.

diezelle57 Le métal est trop mou et tourne si la lame fait pression dessus. Sur les anciens modèles je pense qu'elles étaient plus solides mais surtout on pouvait les tourner a 90 degrés ce qui bloquait parfaitement la lame. T'as trouvé le clavier pour écrire sinon?
