I had tomita’s tsukemen in his original shop the other day and my life has been changed 😌. The chewiness of those noodles, the richness of the broth-you simply cannot imagine how it tastes like until you’ve had it. Hands down best noodles I’ve ever eaten.

On my first ever trip to tokyo i tried my first ever michilin dish and it was the first ever star awarded ramen! it was great! such clean and deep flavor and the chashu was not over seasoned and tender, the generous strips of bamboo give you some texture to break up noodle monotony. i was first in line. i went early cuz i didnt have anything to do and. just. waited. it was worth it, for the best 12 buck dish ive had to date.

The black sauce is Mayu...and if people here aren't familiar with what that is, its black garlic oil, not to be confused with the fermented black garlic which is slowlyyyyyy cooked at super low temperatures, this one is intentionally burnt...just not super quick or it will become very bitter.

Shinichi... tsuta ramen is famous due to its truffle ramen....they have an outlet in singapore and it's really popular with Long Qs

Because of you guys, I've been craving ramen more often, than not. ☺ I'm just sorry that I never learned how to slurp my noodles. Lol! I have a couple of questions please. How many times do you both eat ramen throughout the week? Is it common for people in Japan to suffer from high blood pressure? I remember my mom always telling me to "not drink the soup," whenever we had ramen at home. Of course that's always been my favorite part.

Actually Satoshi is right, it is LITERALLY “black flavour oil”. The reason why in Chinese google translate says it’s “sesame oil” is because the word 香 (xiāng) on its own means “fragrant”, “perfumed” or “flavourful”. And 油 (yóu) means oil. But in the Chinese language, sesame oil 麻油 (má yóu) can also be called 香油 (xiāng yóu) - just as an alternative name. However in Japanese, I don’t believe this 香油 (I think it’s kōyu in Japanese) necessarily MEANS sesame oil. Japanese takes the root meaning of 香 as “flavourful” or “fragrant”. So it’s more like “black flavour oil”, quite literally. Also I believe it’s actually a black garlic oil, not 100% sure as I don’t work at Ippudo, but black garlic oil is pretty common in ramen, especially paired with tonkotsu broth. (I just checked the Ippudo website - it is indeed “fragrant garlic oil”!)
