Olorosso sherry undergoes oxidative aging which gives you the rancio/nutty notes. If the whisky is allowed to breathe those nutty notes may continue to develop rather than be diminished by the gas. But at some point the additional oxygen may overtake the fruit notes and the whisky will lack its liveliness. That being said, if don’t repeatedly pull the cork the whisky should be good for 5+ years or more.

Great experiment guys! Thanks. Five years ago I gassed …wait for it… Glendronach 15 (old style) and Glendronach 18. Several months later they both tasted off. I ended up combining the two half bottles and enjoyed it that way. Side note:, the combined bottle ended up tasting more like the 18. I now only have one bottle that is gassed and that is a 10 yr old springbank. thank goodness i stopped there. anyhow. im done with gas. we all learn by experimenting in life.

Thanks guys! Sincerely appreciate the dedication to this experiment! I always worry about it when my bottles get too low. I think I’ll start transferring to the smaller bottles when they get low. I really find the flavours deteriorate a lot with high proof bourbons that get low. Also, ethanol is almost always more present in those cases.

video idea: get 2 bottles of the same peated scotch, pour one into a decanter. have the bottle upside down to pour in using a funnel and fill it all the way up. and compare that to non-decanted, in original bottle. I always wondered if doing that oxidizes the scotch to the point of where it's not pleasant anymore.

I don’t gas, but to deal with the “old cork” issue I wrap the tops of my long term bottles with Parafilm, which is a stretchy wax material that you can get on Amazon. Back when I used to work in a laboratory, we used it to seal our reagent bottles. You cut off a 1inch x 4 inch strip and wrap it around the top like tape, stretching it slightly so that it forms a tight seal.

At what point do you start using Parafilm? Is it based on how long you think it will be before you open the bottle again? Or how low the liquid is in the bottle? Or something different?

Great experiment! This is what it's all about! Very cool. I haven't gassed any bottles I've had open for 3+ years and I really don't notice a ton of difference.

Great video! I have always fanatically gassed my opened whisky, with wine preserver. It is great to see such a detailed, controlled experiment like this! And with two of my favorites! Over the last 10 years or so, my whisky journey has taken me all over the place. But for pure sherry cask, for me nothing has beaten Macallan 12 Sherry Oak. And for peated stuff, for me, Laphroaig 10 is always a core selection.

Wow! Five years ... That went far too quickly! Very interesting. I have never gassed but either polish off the dregs in a bottle 'tout suite' or pour it into sample bottles. Oh, did you know David Bowie wrote a song about this experiment? I think ... 😉

i think he is using pure Argon gas though, which they say works a lot better then the wine preserver.

Been following this expirement since the beginning... aside from the obvious "no wine preserver gas", I also heard Bart mention the bottles were taped. If this is true I would assume that makes a big difference as well. Me personally I don't gas, but I do want to start using parafilm on back-up\collectable bottles that are going to sit for more that a couple years. Great experiment guys, you followed the science! I tried using the wine preserver probably around when you started this. It didn’t take very long for it to be apparent that the gas if anything made it a little worse. For actual wine though it works great for making a bottle taste great for a few weeks when otherwise wine you generally would want to finish in a couple days.

What is the sealant tape you guys commented on using? Has it helped minimize loss? I do get a bit bummed out seeing some of my unopened bottles lose fluid level over time.

its called Parafilm and it works great. It could help seal those unopened bottles and prevent loss. it takes years though for unopened bottles to naturally evaporate.

I don't do anything to my bottles besides keep the real corks wet a few times a year. None are 5 years opened but 3+ easy on some of them. They all still taste and smell great to me.

@Rares Solomon Just the opened ones. Have a couple hundred bottles and most are opened anyway. I do also transfer to smaller bottles once they get below half.

A stable gas and what goes on deep in the depths of Scotch. Maybe the ion exchange isn't such a bad thing. Oxy isn't a large % of our air and the small volume in a bottle has less effect on Scotch. Seem someone far brighter could shed light on the exchange and if it's such a bad thing.

i could see why the sherry would be worse if gassed and the peat would be better on the nose. wine fregrance is best when exposed to air due to oxidation changing the notes that are smelled whereas the gas interferes with evaporation of the alcohol. since most oak barrels have their flavors extracted by the % of alcohol in each barrel plus the original scent and taste of the white dog made. SCIENCE!

I actually used gas but now I'm seriously considering to toss it in the trash. I have not had whiskies go bad on me that I gassed, but I'm not gonna wait for it to happen.

Love you guys but that’s not how science works. 😂 The most important thing for an experiment like this is that the tasters are blind to what they’re tasting. This series would have been so awesome if it was done blind.
