Mexican indpendence and Cinco de Mayo are dates that Mexican boxers made popular especially Julio Cesar Chavez , promoters now usually have their biggest bouts on those dates and doesn't have to be particular Mexican fighters nowadays.. sort of a like a boxing tradition he wants to introduce to the UFC in having your best fights around that time
