CAMP OVEN DUTCH OVEN CHICKEN THIGHS IN MUSTARD SAUCE
Ingredients:
4 Chicken Thighs
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Paprika
1 tbsp Olive Oil
1 tbsp of Butter - I use salted butter in this recipe
1 Red Onion, finely diced
2 tsp Crushed Garlic - be generous
1 tbsp Red Wine Vinegar
100 ml Chicken Stock
1 tsp Wholegrain Mustard
1 tsp Dijon Mustard
50 ml Thickened Cream
1 tbsp Chopped Parsley
Method:
1. Season the chicken with salt, pepper and paprika on both sides.
2. Heat the Camp Oven Dutch Oven to medium high heat then add the olive oil. Place the chicken in the pan and cook on one side for 4 - 5 minutes. Turn the chicken over and cook for an additional 2 minutes, then remove from the pan and set aside. (Don't crowd the pan. I cooked in 2 batches).
3. In the same pan add the butter. (Chop into small pieces to expedite the melting process). When frothy add the red onion and garlic, then cook until translucent and soft.
4. Add the red wine vinegar and chicken stock, stirring with a wooden spoon to deglaze the pan. Add the mustards and stir in a figure 8 pattern until the sauce begins to form.
5. Place the chicken back in the pan, cover with the lid and cook for another 8 minutes.
6. Then remove the chicken and cover to keep warm. Take the Camp Oven Dutch Oven off the heat, or turn off the gas in my case, stir in the cream and parsley to finish the sauce.
7. Plate up the chicken and spoon over the mustard sauce to serve.
We had Zucchini Bake but this recipe would work well with Garlic & Chilli Scalloped Potatoes or even green beans or broccoli.
