Hey now... the chefs were bogged down by the normals. On a side note; As much as I like seeing Jamie mess up (along with the others) I did enjoy his 'Mise en place' in a previous video. I say they should give Jamie a bigger spotlight under less pressure. He can't be pigeon-holed into just being a clown at times.

Also. I'm among those people who want to roast them right now. Why wash your rice AFTER you cook it? You heat up the rice first just to make it cold? Don't you need to heat it again? That's a complete waste of time. Look at any Indian Basmati Rice video and they'll ALWAYS steam cook their rice ONCE.. Same with any ASIAN Jasmine Rice video.

James just does those things to throw the other guys off. I'm sure he's a nice guy irl but he's the spitting image of my uncle and he's a holier than thou kind of person and it's hard to differentiate the two. Sorry James, but you really do remind me of him 🤷‍♂️

As Asians, we usually have a rice cooker at home and use the finger to measure water level. However, I really appreciate Bens very clear instructions for cooking rice in pot on stove top. Thanks Ben , I learned something despite eating rice literally every day. 😃

I grew up cooking rice on the stovetop for a long time because we actually like the crispy bit you could get at the bottom if you do it right. Eventually, we grew out of that and started using a rice cooker. hehe.

A lot of comments talk about "just used rice cooker" "why sieve?" but every culture that eats rice have their different way of cooking rice. Not every country uses rice cooker. I am asian myself and even in Asia different regions cooked rice differently. For example the basmati, the Indian style rice are cooked in either way, straining the water after being cooked or absorbing the water. It depends. This video is made for viewers to show the accessible way especially attending to those whose diet does not regularly consist of rice.

I'm gonna go out on a limb and suppose you haven't heard of Uncle Roger. He's a character made by Nigel Ng. Part of his schtick is chiding people for not using a rice cooker and straining rice. Most of those comments are likely from niece and nephew in reference to Uncle Roger.

@@sean437I do know who Uncle Roger is and I have never missed watching his videos but if you scrolled down the comments, some of them are taking it literally, even when sortedfood gives an explanation and they are whom I specifically talked about. That does not include any Uncle Roger nieces and nephews comments. Only those who truly gets offended or taking it literally. HAIYAAA!!!

Just wanted to say that these Friday lessons are excellent. I've tried all the other recipes/methods in the Friday sessions - and they're all Delia-level infallible. One of the best things about them is that they work at every level. You can learn to cook from them or - like me - they can correct mistakes I've been making my entire life. It's really appreciated. I started cooking rice when I was 10y/o, we measure water with our fingers and never cover up until all the water is evaporated then heat it down. Lucky we have a rice cooker now! #asian#riceislife lots of love from 🇦🇺 🇵🇭

Everyone thinks that China and Vietnam, Thailand are the only countries in Asia. But there's so much more and not every Asian cooks they're rice with that method. Please keep in mind that Asia is not all about China. The West asians cook they're rice many different ways . For Afghanistan it's mostly without the rice cooker and with cumin seeds and a caramel. Might wanna check it out?

My trusty way is 2 parts rice 3 parts water, bring it to a boil with lid on, once it boils put in bed cover it with your duvet and you can forget about it. That is for me the basic. sometimes I toast the rice with oil garlic onion and or spices. Works for long grain, short grain wild rice etc.

This is the most helpful video I have ever seen 😂 I have become quite a good home cook, but I was always intimated by rice, so have always bought the microwave stuff (I know that's actually horrendous!) This rice is amazing, full proof and so easy - and cheaper! Thanks so much for this.

Honestly these videos are so good. I've only ever cooked microwave rice! Knowing the ratios are so helpful!

Bear in mind these aren't necessarily correct ratios as different types of Rice require different ratios. Unless you don't mind draining rice after cooking it which basically just means it's not done properly with short grain lol

I'm gonna keep saying it. This is my favourite series you put on. Would the rest of the team be at all interested in sharing their simple & very tastey dishes, or maybe favourite cooking trick in action making a dish? I really appreciate the calm clear instructions with out making me feel like I'm 5 and only visiting the kitchen. As always love the teams obvious joy with food.

Well I tried it myself with long-grain (not basmati though), it took longer than 10 mins but it was good. I only had sesame seeds on hand but looking forward to trying it again.

I haven't made basmati rice, but I've been using the oven for years for my regular long grain, courtesy of Alton Brown and Good Eats.

...But why? It's traditional in my part of the world cook the rice with a lot of extra water and then to drain the rice...maybe not down the sink, we would generally drink the starchy water along with our meal. I mean...rice is a staple in so many parts of the world and so there's so many ways to cook it. So what's with the god damn rice cooking gatekeeping?

@@rahulr1305 yes, there are so many people getting mad about the way other people cook their rice. Besides, if it works for someone, why bother? I usually just get the rice, put in a random amount of water, cook it and taste to see if it's right, and drain it in the end. Doesn't matter that's not how it should be, it works for me.

@@Marqui1015 where i live many people have been also using the pressure cooker for rice (besides stove top saucepan/pot) and i use the finger technique to get me the right amount of water because I'm a novice, older people just eyeball it

@@rahulr1305 It's a form of bullying. Not sure why people feel the need to do it. Sure, if someone's botching your traditional dish, politely tell them they messed up, but rice is a global staple. No one has any more authority to dictate what is the appropriate way to cook rice than they do to claim ownership of braiding hair.

Absolutely loving these Like a Chef videos. Old school Sorted, and doesn't talk down to us. It's also brilliant seeing the way the chef thinks: everything done in ratios/using other things to measure ingredients (old milk bottles you know are 500ml etc) .... then again, that could just be a Ben thing

A common whole spice blend added to rice is "panch phoron": fenugreek seed, nigella seed, cumin seed, black mustard seed, and fennel seed. That looks about like what Ben added to the ghee for his basmati rice.

@@SortedFood rice cookers are not a luxury, rather a kitchen essential in every modern asian household. funny how westerners value a toaster more than a rice cooker 😂

@@-EchoesIntoEternity- if you have rice daily a rice cooker is essential. Many of us have it a few times a week, i have no room for another appliance in my kitchen. So yah, i use my toaster daily for my kids, so its value is there.....

@@-EchoesIntoEternity- because westerners eat different food. a good ricecooker here in the west is expensive. A 2 slot toaster here is $15. I don't know about you but we don't eat rice every day, so to buy a separate thing to cook it is a bit ridiculous. However, most people have bread with breakfast or lunch so that toaster gets use. It all depends on where you live and what types of food are consumed, I don't think shitting on people for having a different lifestyle is a good thing. But I understand the original comment was a reference to Uncle Roger jokes. The sieve is used for a good reason in this case unlike Auntie Hersha who rinsed her rice AFTER cooking it..

YES for washing the rice under running water before the cooking instead of afterward. it was a stressful thing to watch videos of people rinsing their cooked rice under the tap water and even more devastating when there are comments defending them 😭

I always cook my “plain” rice with at least a cinnamon stick, some cloves and cardamom (all whole) Always tastes great

I just did the basmati version with 50/50 water and coconut milk. Turned out a little stickier than I expected, which I'm putting down to the coconut milk consistency, but it's nice. It's coconut rice. Wondering next time about adding some sugar into the mix. No idea how much, though.

That is always a plausible way - we cooked rice like that for best part of a decade. Still cooks and is super easy if you don't want to weigh/measure anything. But this absorption method gives you a sticky rice and allows you to flavour the basmati.

@@SortedFood I've found that the absorption method is also a good indicator as to when the rice is done, since you can simply check to see if there's any liquid left at all, and if there is, put the lid back on and let it cook some more.

The video was great, but the negativity in comments wasn’t good. They tried something new, the black rice, and it didn’t work. Give it a rest.

I always dump a pat of butter into my rice cooker after I measure the rice and water. Perfect amount of butter on every grain.

Even easier: Rinse and toast rice as you choose - or not. Water ratio to rice: from 1 1/2C to 2C water (as you prefer) to 1C rice. Bring water to boil seasoned as you please, add rice. Bring water back to boil for a minute or two. Stir once or twice, then lid. Turn off heat and walk away. No really, just walk away. About 20 minutes later, fluff and serve. This will prevent scorching of your rice and possibly ruining a perfectly good pan. This will give you the most consistant rice you can get. Never over cooked or under cooked. (Taught to me by a friend's Chinese Grandmother)

This is my method! In principle, anyway. Water is the same amount of rice in cups + 1/2 cup. But the additional water can change depending on what kind of rice you use. So it's really estimation. I never really use the finger height method. I like the accuracy of the cups/weight version since you can get reproducible results once you get the ratios right.

I always cook rice this way and is incredibly consistent. I’ve found that sometimes basmati will take a little less or more water depending on the age and brand. Question: what is the ideal ratio for brown basmati? Would love to know as brown basmati has incredible flavour and texture.

I add celery and/or carrots & quarter of an onion to butter until warms up then add the rice stir, water & voila perfect way to include veggies on meals

I thought for sure one of your options would be brown rice. lol Basmati is lovely rice, the pudding rice you are doing second, I have a packet I need to use for a glorious paella before it goes off. It says paella rice on it but I am gonna call all those short grained rice pudding rice. lol It's used for a traditional rice pudding "Risalamande" here in Denmark. It's funny. They used to "bulk" the dish with almonds and cream cos the rice was the most expensive part. The imported ingredient. Rice is lovely, it freezes better than pasta and potato. And luckily today, it is cheap. Especially brown rice. My government is actively reducing VAT on healthier options. So brown rice is cheaper than parboiled rice, white rice and even basmati. I've lately been working on my rice frying game and yes, I had rice vinegar to my rice. Asia in general has such amazing flavours. And I just recently understood why Japan sided with Hitler in WW2. It had little to do with Hitler and his ideals and everything to do with the fact that China had sided with the alliance. The climate today, producers of vegetables that would normally be bought by restaurants, these ingredients are now ending up in the shops for the normal person to buy. Today i saw green marmande tomatoes in Lidl. And they've had these pale yellow/green peppers for some time now. So much flavour in them. I have been looking for seed from something similar for years. Like Hungarian (where I spent many childhood summers) and I believe these are produced in Hungary. Yes I have collected seed, let's see if they are hybrid or true. lol

What's your view on the recent resurfaced articles concerning the levels of arsenic in some rice and the need to do extra preparation (I.e. Soak, parboiling, drain and then cook).

I know you are asking Sorted, not me, but the way to look at it is this. If you eat a lot of rice it could be a good idea to use one of the methods that reduce the levels of arsenic but it also does not build up in the body so it isn't necessary.
