Cook With Me: Learn How to Make Fried Bake with Plantain Takari, Fried Cabbage, and Saltfish

Hi, lovely people! Cook some plantain-eddoes takari & fried cabbage and tomatoes with plenty fried saltfish! To eat these yummy dishes, I'm also making some fried bakes or "fry roti".

INGREDIENTS:
🥐 FRIED BAKE (20 triangular bakes)
5 cups of AP flour
1 tbsp of pink salt
1.5 tbsps of baking powder
4 tbsps of butter
2 cups of water (you might need more or less depending on humidity, flour brand etc)
Oil for frying
Fry at 450F for 40-50 seconds
🍌PLANTAIN-EDDOES TAKARI
3 green plantains
6-8 eddoes/small taro
1 medium onion, diced
6-8 cloves of garlic, minced
1.5 tbsps of pimento peppers, minced
Hot pepper
A few sprigs of thyme
2-3 stalks of chive/green onion
1 lb of boiled & fried saltfish
Salt as needed
1 tbsp of cooking oil
*Hot pepper- optional
🍅 FRIED CABBAGE WITH TOMATOES
1 large cabbage
4-6 tomatoes
1 large onion, diced
10-12 cloves of garlic, minced
3 tbsps of pimento peppers, minced
Hot pepper
A few sprigs of thyme
3-4 stalks of chive/green onion
1 lb of boiled & fried saltfish
Salt as needed
2 tbsp of cooking oil

I would definitely try the plantain but I would curry it like green fig. I lived in Ohio and my daughter lived in NY and she came to visit for a week. Knowing how she loved curry fig I cooked some and she ate it for the whole week so I would definitely try the plantain.❤

The way you did the cabbage..you can substitute smoked herring for the saltfish. Just for a variation.👌👌

😂 I have a special plate that I use to eat anything I have 😂.... approximately how much baking powder I have to used to make sada roti.... some times I put too little or too much.

Haha Nice! I guess I have one too but I always cracking on him because if he can't find his bowl he does be like fish outtta water 🤣 For 1 cup of flour, I do 1 1/4 tsp of baking powder and it always works 🙂

If you can afford it, run hot water on the saltfish overnight, it removes all the salt and I mean all the salt. You will find that you will have add some salt back to it, if you wanted to, I chose not to.
