Hi, lovely people! Cook some plantain-eddoes takari & fried cabbage and tomatoes with plenty fried saltfish! To eat these yummy dishes, I'm also making some fried bakes or "fry roti".

INGREDIENTS:
🥐 FRIED BAKE (20 triangular bakes)
5 cups of AP flour
1 tbsp of pink salt
1.5 tbsps of baking powder
4 tbsps of butter
2 cups of water (you might need more or less depending on humidity, flour brand etc)
Oil for frying
Fry at 450F for 40-50 seconds
🍌PLANTAIN-EDDOES TAKARI
3 green plantains
6-8 eddoes/small taro
1 medium onion, diced
6-8 cloves of garlic, minced
1.5 tbsps of pimento peppers, minced
Hot pepper
A few sprigs of thyme
2-3 stalks of chive/green onion
1 lb of boiled & fried saltfish
Salt as needed
1 tbsp of cooking oil
*Hot pepper- optional
🍅 FRIED CABBAGE WITH TOMATOES
1 large cabbage
4-6 tomatoes
1 large onion, diced
10-12 cloves of garlic, minced
3 tbsps of pimento peppers, minced
Hot pepper
A few sprigs of thyme
3-4 stalks of chive/green onion
1 lb of boiled & fried saltfish
Salt as needed
2 tbsp of cooking oil
