In today’s Cook With Me, join me in the kitchen as I cook some of my favorite Trinbagonian comfort food- Curried Chicken, Peas Dhal, Aloo Puri & Onion-Pepper Chow. What does comfort food mean to you? Comment below⬇
🛒Ingredients:
🥔Aloo Puri (Aloo Roti)
• 2 cups flour
• 2 tsp baking powder
• ¾ tsp sugar
• ¾ tsp salt
• ½ - ¾ cup hot water
• 2 tsps oil
• Filling:
• 3 medium-sized aloo (potatoes)
• Salt (your preference)
• ½ tsp roasted ground geera
• 2 tsps Caribbean green seasoning
🧄Peas Dhal
• 1 ¾ cups of pigeon peas (1-14 oz package)
• 1 medium onion
• Hot pepper (your preference)
• 4-6 seasoning peppers (pimento)
• 2-4 sprigs of thyme
• 10-12 cloves of garlic
• 1 ½ teaspoons curry powder
• ½ tsp roasted ground geera
• ½ tsp black amchar masala
• ½ tsp turmeric powder
• 2 tbsps water
• 1 tbsp Caribbean green seasoning
🍗🐓Curried Chicken
• 1 whole chicken (6-8 lbs), cleaned and washed with lemon/lime juice, flour or white vinegar
• ¼ cup of Caribbean green seasoning
• 2 teaspoons of salt (your preference)
• 2 teaspoons of freshly ground black pepper
• 2 teaspoons cooking oil
• 1 medium onion
• 10-12 cloves of garlic
• Hot pepper (your preference)
• Seasoning peppers (pimento)
• 4-6 sprigs of thyme
• 1 teaspoon turmeric powder
• 1 teaspoon roasted ground geera
• 1 teaspoon black amchar masala
• 2-4 curry (karipuley) leaves
• 1 tablespoon curry powder
• 2-3 tablespoons water
• 1 tbsp hopped bandhania/shadon beni/culantro, cilantro and Trini chive (scallion) for garnishing
🧅Onion-Pepper Chow
• 1 small onion, sliced
• Hot peppers (your preference)
• Chopped cilantro
• 3-6 cloves of garlic, sliced
• 1 tbsp lemon juice/lime juice/white vinegar
• Sprinkle of salt
• ½ tsp green seasoning
