Your dish made me smile on completion.....now I understand why, one nurse co worker asked me if I was eating Egusi stew.......it was a tomato sauce, pasta with ground meat,spinach and ricotta cheese.(soulfood-italian🙃🤣🤣🤣)..which looks like your cooked dish at the end.This nurse was from Nigeria....advised me how to make egusi..and only get the melon seed(not)ground.....I'd been a big Nolllywood movie fan and wanted to try but 'raw' over tone was there...keep trying till I got ok.... will try again....thanks to you...lovely lady. Awoo my favourite oo esp with unriped plantain 😭😋😋😋Kwankyewaa way3 nyinaa. My mum alws adds wagashi to hers. She fries her wagashi and adds it to the sauce like meat. Trust me dear,it tastes so nice wen she does dat. I know dis will also be extraordinary 😋😋👍

Yes oo aunty k most Nigerians fry their egusi in red oil until it is dried and no moisture so it will be separated from the oil and they use quite a lot of red oil

Twumwaa Millicent it’s basmati rice and it’s really sweet I think it’s from India
