Tip when cooking with charcoal. Always wait for the charcoal to turn completely white before throwing food on it. That’s how to avoid getting that “lighter fluid” taste.

as soon as I saw him waiting for the grill with the lid ON, I knew Mav wasn’t a griller.. 😂. Then as soon as he lit it and put the steak on the grill the first thing I said was “that’s gonna taste like lighter fluid” 😂😂🤦🏽‍♂️.. all mistakes I made in my amateur grilling days

Three of the best tips for cooking Wagyu I got were from a Japanese Chef: 1) Salt the meat generously (he used a LOT of salt) for 1-3 hours before cooking - in the fridge. Because of the high fat content, Wagyu needs more time for the salt to work into the fibers. 2) Put your cast iron pan in a 400F oven for 10 minutes before you pan sear on the stove, in a DRY pan (Wagyu has plenty of fat and needs no oil a properly seasoned cast iron pan), and here is the weirdest one, but it's for Wagyu specifically: 3) Leave the steak in the fridge until just before searing. He said that if it comes up to room temperature, it will start to melt and you'll lose a lot of flavor. You want to "sear it quick, right out of the cold". Oh, you proved another thing that he told me, never grill Wagyu, because due to the high fat content, it drips most of the flavor out over the coals, causing flare-ups and losing flavor with every drip.

Hey Mav just a heads up. That was your muffler not the exhaust manifold. Your manifold is located under the hood. It has a pipe for every cylinder heading out of the block into one main pipe.

Yep! He even said that he saw " people putting it inside the engine bay but I think I'm the first to put it on the exhaust manifold" at which point, I decided that he's an idiot when it comes to cars. I was almost yelling at the screen " because the manifold is under the hood you idiot...you put it on the MUFFLER" if he would have put it on the manifold, it probably would have been well done in the 10 minutes

Another tip for charcoal when using Kingsford Match Light... When starting it up, pile the charcoal into a mountain shape then light the bottom... Wait until majority of the pile turns gray... Shake the grill to flatten out the pile, then your ready to rip tatter chip. 🔥🔥🔥

What you're calling your exhaust manifold is your exhaust pipe and muffler. The manifold (unless its been replaced with headers) is attached to the engine under the hood.

Hey I have learned a lot about steak cooking in my 13 years, a few small tips on the grill, let the coals whiten , and I even prefer to relighted fluid to heat it up more when it runs low, I also recommend taking Starbucks coffee grounds with the salt and pepper to make a crust ( it sound odd, but oh is it good ) I hoped this helps love the video!

I’m a semi truck driver and use an air fryer for steak often but I set my temp a lot higher than what you did. I haven’t tried A5 but a nice thick ribeye @400 for 20 mins flipping half way is usually $$$

Need to wait for those coals to ash over and all turn white. The best method I found for A5 Wagyu is cutting to 1 inch wide strips and quickly searing so you get a perfect crust on all 4 sides. And because the pieces are only about 4 inches long and 1 inch wide/thick they cook very quickly. Kosher or rock Salt or soy sauce to dip in on the side

Hey Mav. Great video. You should have let those charcoals go until they were ashy and red hot. It's best not to cook it on the grate like that because the fat will render out. The cast iron grill is the best way for a nice Sear. It was a little painful to watch you put it in the air fryer 😂 Keep making those awesome videos!

an air fryer seems trashy but from personal experience ive made some damn near perfect steak, salmon, and bone in thick pork chops with technically less hassle than normal cooking. theres an argument for air fryers but i cant defend black coals and cooking on a muffler. used to work with a haitian guy that made fish on his engine at work. it was doen by lunch and saved money and time.

Last time I was in Japan they used potato starch and not flour. Next time just set the smoker on smoke with the lowest heat possible for a half our to hour. Then bag and water bath. It will lock the smoke flavor in and still be very juicy. Thank Guga for that one

I demand a re-do for charcoal. Use regular Kingsford, not that Matchlight crap and NO lighter fluid. Use a couple of firestarters to get the coals going, wait until they ash over and then grill the steak. Your results will be 100x better.

I went to a fancy restaurant in Florida and got an A5 Japanese steak, I asked the waitress if I could get medium rare, they actually suggested to go to medium with these A5 steaks to truly render all of the fat and the results are supposed to be much juicer.. maybe something to try!

Medium rare temperature is all it takes to break down fat in a steak, and wagyu fat is well known to break down easier and at slightly lower temps than some other types of beef fat. Strange that they recommended that.

Hey bud I’m a pit master from Memphis, Tn. Been watching you for years. As far as charcoal goes. Make sure when you grill you use “lump charcoal” and never use lighter fluid. Anytime you use lighter fluid your food will taste like it, instead, use either a charcoal chimney or “tumbleweed” fire starters love the videos my guy

Wagyu sushi is a thing, but the wagyu is thinly sliced, laid on rice (like sushi), and then seared with a torch. I would highly recommend preparing the meat in a specific way to best compliment the cooking method, though I do appreciate you keeping it as controlled as possible🤙🏽

we cook steaks in our ooni all the time. We use a cast iron pan in there to help create the crust and keep the juices in. We also do burgers, veggies, pork chops, etc.

Something ive learned about air fried meat. I too have experimented with high quality meats in an air fryer. A common outcome, the meat almost always looks gross, but the flavor is always insane. I think a small part of it is in the seasoning. Everyone has their own preference on seasoning. The positive that comes with air frying is that whatever particular seasoning flavor youve chosen is going to really come out on the meat if you air fry it. Because there’s no direct flame on the meat the seasoning is melting onto your protein and getting absorbed. Honestly i think it might be the future.

The trick for me is to preheat the air fryer and to also cook at a high temp. Steaks always come out with a nice, crispy outside and a juicy, flavorful inside. I also throw in butter for the last couple minutes.

Me and my dad used to wrap up hotdogs in tinfoil and cook it on the exhaust at a rest area since he is a trucker, and they turned out pretty good 😂

i think i have the same 14" charcoal grill. i use less charcoal and only put it on one side so i can cook on indirect heat after searing the steaks. it works great. i prefer mine medium well and my mom loves well done.

My family only uses “Mesquite” Charcoal. Which I believe is Hardwood, the best. Usually find them at hispanic markets or some grocery stores. Dont use lighter fluid either, paper towel with some cooking oil is all you need. A lot cleaner taste to the meat, and yes let charcoal burn enough where it’s almost completely white.

With the air fryer you need to prep the air fryer and the meat before cooking always pre heat air fryer high as it goes at least 10 mins before putting seasoned and oiled meat inside. It definitely makes a difference also salt the steak before cooking it helps creat the crust and my best chef tip is to invest in cast iron it's one of the best ways to get crust on any meats.

I always get a nice crust when air frying my steak. The trick is to preheat and cook it at a high temp for about 7 minutes, flipping about halfway.

I relented and did a normal steak in an air fryer. It had been frozen, and not defrosted for when I got over there. Rather than abuse it in the microwave to defrost and then leather-fry it like the others people wanted. I actually air fried it from frozen. I slightly did it over a min or two, but by god it was damn nice, and like butter melting. BUT I seared it in a pan first, even frozen which gave it a nice crust on it, and then cooked it in the air fryer. Medium rare, but slightly more done than I like them. I'd consider doing it again that way. For never doing it again and being at a loss for what to do to fix it, it worked pretty well for a bind.

Having eaten steak fresh from the farm to the butcher shop, I can say with confidence, Waygu isn't made because the bovine is less stressed; fat is a better insulator and generally inactivity leads to more fat, so it's probably a combination of colder climates, easier terrain, and unique diet.

Or they are mostly confined their entire lives. Also, those steaks come from the fattiest parts of the animal. Used to be the throw away parts, but they somehow conned rich people into thinking it's some kind of delicacy and got them to pay ridiculous amounts of money for the garbage parts of a cow.

Eeeeek on sous vide and the air fryer..., grilled 1.5 min on each each, by fire on a flat rock, cast iron on med 2min each side and smoked. My favorite!!! Salt to be added after cooking. I use garlic 🧄 and pepper only. -- You did great Mav!! !

Genuine question for you man... LONG term, going trucking full time will save lots of money and cut a lot of bills or payments you'd have if you had a house. But in the beginning, I'm sure you had to set a lot of money aside in order to make the move to full time trucking. My question is: were you able to make the move because of your KZbin revenue or did you save up from a previous job you worked before? If so what job did you have /what salary range? I'm simply curious.. basically, how do you manage to afford living like this?

FWIW : Reverse Seared / Smoked / Sous Vide Steak does *not* need to rest. Eat it immediately; it's hot and delicious.

My brother got my mom and me A5 waygu from Japan a couple Christmas ago. I am a pretty good cook and prepared them to the best of my ability. The meat was def different than anything I had ever had. It was like candy. Little to no chewing need. It was kind of weird to be honest. I was happy I gave it a try but I'd rather have a 12 oz ribeye over A5. It is overrated imo.

My Favourite is smoked steak. However, it is very easy to overcook. My favourite is a high quality 1.5 inch rib steak. I either use the maggi seasoning (liquid) or a homemade seasoning that is similar flavour. I smoke on very low heat till outside is very purple smokey with solid dryish crust. I do baste with marinade every 20 mins. Then very high heat with mesquite charcoal and at most 2 minutes on each side(smoked raw steak cooks extremely fast). Try is with a side of king crab legs with garlic butter lemmon dipping sauce, greek salad, and either garlic bread or garlic butter pasta as a side. Nothing better,

Great adventure in cooking. Mav. We cook our meals on our semi diesel engine turbo exhaust under the hood. But we don't cook that type of steak. We use 2 thick aluminum foil Turkey pans. Cut the meat into 2 inch squares and add onion chunks, carrots, celery and red potatoes with a cup of water and spices. Fold the second pan around the pan with ingredients and wrap twice with aluminum foil. Sealing it good. Place a probe thermometer into the top and place it on the exhaust turbo on your engine. Cooking it to a temperature of about 160 .. for about 30 minutes. Remove from engine and let stand for five minutes or so. The time to cook varies with each engine and travel time.. Good luck

you have given me a good idea, I'm thinking of getting a 2011 - 2022 with the same center console as your truck. plus in mid November or by Christmas time this year, I plan on getting back into the trucking industry. it will have been 1 year since the accident when I rolled the truck over

I’m sure you’ve read the other comments, but when cooking on charcoal you’re supposed to let them burn until all the black is gone and they’re essentially white/gray then put the food on. They definitely weren’t hot enough and didn’t have time to burn the lighter fluid off

I feel you on the overcooked pieces.I'm used to 1" cuts and forgot I'd bought 3/4" as they were ready and the butcher done for the day.Cooked same heat and time.(gas grill).They weren't med-rare.They were darn near well done.Glad you got to enjoy most of them.That smoker method looked pretty good,especially after you seared it.I'm used to @1lb New York strips,and I just can't imagine eating 5lb in a day's time...lol.

Can't remember where I saw it, but with charcoal grills a little trick is if you take a paper towel and saturate it in olive oil, leave all four corners exposed to light and put the coals on top with a little more oil and light em up

sousvide you always should first warm the water to right temprature. also submerge the whole steak under the water.

Get yourself a "chimney" for your charcoal grill Mav, about $5-10 from any walmart, my favorite and only way Iight up my coals. Good video tho! Edit: Also seen another comments that make a good point, make sure those charcoals are white before you start cooking. Honestly, charcoal grilling can be a learning process (still a learner here) but everyone likes my steaks!
