Ah I’ve been playing this game for some years now and practice a lot in particular for these memorized versions. Though I know people who are even faster than this :)

Yes that’s right! The strategy I like to do sometimes is leave all the money initially, then collect the leftmost money first followed by the rest from left to right. This will more or less let you serve the customers from left to right. But as long as there’s money in a spot, no one will go there, so you can manipulate as you wish :)
