pls try tortang talong, eggplant omelette. just grill the eggplant on the stove and peel. then beat an egg, add onions, tomato and garlic,some salt and pepper,drench the eggplant and fry. dip in banana ketchup. i can eat like 4 of hose in 1 sitting😅.

You guys did a great job! Next time, make a simple sauce to dip it in - vinegar, a little soy sauce, chillies, diced onions. It will taste even better!

Never put a lid when deep-frying, like deep-frying french fries. Moisture will be trapped and will make whatever you're deep frying soggy, instead of crispy, if the moisture is trapped. Plus for safety also, without a lid you can see easily if the oil is getting too hot and boiling too much. This looks amazing though, but better with some good condiment/sauce on the side, like banana ketchup, or Mang Tomas (Filipino lechon sauce), or even regular ketchup, or just a simple mixture of vinegar, salt and some hot sauce. Next, try tortang talong (eggplant omelette), like most people suggesting here. Or something like Chicken Arroz Caldo or Chicken Afritada. The ingredients for Chicken Afritada are easily available in any supermarket, even regular North American ones.

Great video guys! My fam is from The Philippines and I ate this often growing up. A great sauce to pair with this is a classic where you finely dice some onion, garlic, chillies, soy sauce, and or vinegar/calamansi. Looking forward to more Filipino dishes :)

I don't think I've ever had this but I have had something similar. Chinese Roast Pork Belly. Usually my mom buys it from the store freshly made, maybe once a year. One of my cousins actually made it once when we were visiting. Not sure which recipe he used though.
