Come with me as I cook supper for my family. May we learn to have empathy for those we spend time with and may we always look for the hope that lines every storm cloud.
The meal:
Lebanese Chicken
Turmeric Rice
Naan Bread
Split Pea Soup
Naan Recipe:
1/4 cup warm water
2 teaspoons sugar
1 1/2 teaspoons yeast
3/4 cup milk
3/4 cup plain Greek yogurt or natural plain yogurt
1/4 cup Olive Oil plus extra for cooking
2 cloves garlic minced
4 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
Combine together the water, sugar and yeast. Let sit for 5-10 minutes or until the mixture begins to bubble on top
Add in the milk, yogurt, oil, minced garlic, flour baking powder and salt. Mix until the dough comes together with your hands.
Turn dough out onto lightly floured surface. Use floured hands to knead the dough until smooth, about 3 to 5 minutes.
Lightly grease the same mixing bowl. Transfer dough to the bowl and cover. Let rest at room temperature for about an hour until doubled in size.
When ready to cook, divide the dough into 10 equal pieces. Roll into balls, then use a rolling pin to roll each piece of dough into a large oval, about 6-inches long and 1/8-inch thick. Repeat with remaining dough.
Heat a large cast iron skillet over medium-high heat. Grease skillet all over with a bit of olive oil.
Place one piece of the naan on the oiled hot skillet and cook until bubbles form on top, about 1-2 minutes.
Flip and cook for another 1-2 minutes, until large golden spots appear on the bottom.
Remove from the skillet and wrap in a clean kitchen towel. Repeat with the remaining naan (keep them wrapped in a towel while you work).

I’m so sorry that those things were said to discredit you, Laramie. We are also living on my husbands income exclusively while I am home with the kids. He brings home a bit more than your husband, but not enough for us to choose a different lifestyle from yours! We are proud members of the ultra-tight budget club and wouldn’t have it any other way. I live off my retirement also. All my bills have increased I'm debt free but have utilities and insurance. I started canning again 3 years ago and I've always had a garden. I started raising chickens. I have not went into a sit down restaurant in over 5 years...no tv ...i have not done any major grocery shopping since March 2023...i wouldn't change anything.

I'm learning to be part of the ultra tight budget club. I'm a not credit club member but we still cat get ahead and our needs grow as disability and age begins to ravish our family. We do garden but I'm learning how to make it more fruitful and M learning to can and process whole food better while being low carbohydrate to help support our diabetes without needing medication. Blessings to all.

I’m now in my 67th year. I was the eldest of four children. My mother always kept the basic foodstuffs in the cupboard so when money was very tight, she would make us pancakes for our supper with lemon and sugar. We always thought she was giving us a treat, we only found out years later that it was because she had nothing else to give us that day. We had free school dinners which back then were proper meat and veg meals, so we all grew up healthy and strong. My Mums pea and ham soup was the best! Even my husband loved it although he refused to eat soup, stews and casseroles normally. We grew up being taught to cook by our mother, who was an excellent cook and loved to try new recipes, so I knew how to feed my own family on a very low income. It’s very sad that most young folks today don’t know how to cook or ‘make something out of nothing’ as we called it. When my children were young, and we had no food in the house, I made naan bread with black onion seeds and a curry sauce for our evening meal. My family loved it and never felt deprived. The real problem nowadays is that most mothers are forced to go out to work and are simply too exhausted to come home and cook from scratch. I find it very sad.

I agree that many dont know how to cook. There are also a lot of grown adults who cannot cook either, even into 40s and 50s. In my part of canada, schools hold parents responsible to feed their kids. It sounds harsh in many places but it is the responsibility of the parents. The school has zero obligation to feed students. Any school which had a cafeteria (which was very very new when I was growing up as I was 14 when i first saw a miniature version, we only every saw it on tv; so nobody really questioned... it was actually a very odd experience to potentially have meals made by the school). Cafeteria's or food programs were a privilege. No school was allowed to serve food unless it was to teach students to cook. I am not referencing home economics, I mean a full commercial kitchen. Only 2 schools in my city had it. With 1 school that did have it for low income areas and yes it was a class for the low income as equally as those families who are well off. Both low income and well off were treated the same by the school system. The reason behind it was although many parents did teach their kids to cook. It was a privilege because its costly to have a cafeteria for one. Also it taught parents and students alike to take it seriously and appreciate it. It was a basic skill a parent could teach, but the school took it on and brought licensed chefs. We dont have lunch ladies. Students in the foods program, we were like the nerds of the school. Yet it taught us how to be responsible and follow instruction. We appreciated food at the school more because of it. It wasn't free, you still bought it. My teach said the school board took it so seriously that if not enough students signed up, it would be closed. It honestly was a great experience and in a city where cafeterias were a very new thing. We learned to appreciate it. Only some parts of canada will have a program for low income breakfasts but you need to meet criteria.

Yep. Now 85, and 5 kids....who now are Healthy adults. I had to stay home, cooking cleaning advising taxi-service, etc. This was a FULL day's work, starting at 5:30 a.m., and women were NOT done 'at sundown' like males were entitled to and expected. In the '50s-'60s, we women in the workplace were frowned on.

I worked full time as a nurse when my two children were growing up. it is incorrect to assume that working mothers can't prepare healthy, from-scratch, frugal meals. It just takes planning. I was proud to provide homemade meals for my family while working. My family always knew they could find something I had made in the refrigerator if I was working.

Unfortunately, there are people in the US who have suffered with the lack of food. My mother used to go without meals so the 5 of us could eat. I was blessed with wonderful grandparents who helped. I find I have more wonderful memories during those times. I am so grateful for those memories.

Im 34. At uni, unmarried, childless, single. I have struggled with money almost all my life but my family is better off nowadays. I really want to live frugally, and save money to give to charity. Id like to cook at home instead of buy from expensive restaurants. Im from pakistan. Your impact is great, you are being heard across the globe. God bless.

Hey sweetie-I love the sound of your voice it’s so soothing-after I watch you Laramie- I go straight to sleep- I don’t have a long time to live- I’m only 57 - I love how humble you are sister- could you please pray for me and others to pray for my healing- you cook the way I cooked for my three sons- I’ve been cooking since I was 9 years old and I didn’t cook anything from a box or can- I’m from Louisiana- we ate everything out of the garden and my daddy hunted meat for us and also fished and caught frog legs for us so I definitely can stretch anything possible-love you sister for being so real love Kelly ❤

I’ve lived in the USA my entire life and I’ve been homeless, hungry all while having a two year old daughter. It was so hard but we managed to pull ourselves out of that situation.

What is so interesting about your videos are your words of wisdom, the peacefulness of your voice, and the calming music in the background. You don't need sophisticated video equipment or lighting. I'm not surprised your channel is growing quickly. It's refreshing to find a young family which is dedicated to living within its means and stands by that philosophy in really practical ways. You may sometimes need broad shoulders and deaf ears, because others are often judgemental for no good reason, but there's no one way of living life, and we have our own journeys through life to complete and that means all the good bits and any bad bits that come from time to time. I find it relaxing to watch you absorbed in cooking and turning out delicious meals on a budget, and trust me, your children will benefit in so many ways from having their loving mom around in their formative years to guide and help them. Oh my your so right. When I became a single mom. I worked seasonally so I could be home as much as possible. I got lucky a family member was unable to work and looked after them when that were young. I worked evenings so I would make supper then after go to work. So glad I made the choice to tuff it out with as little work as possible so I was there. No drugs no booze no stupid teen boy BS. Both in uni. Great humans I did well.

Just a thought, what we had in the depression and it is really good. Boil potatoes, once they are cooked, peel and slice them. Now making a roux. Butter, beef cubs, flour, add water until it is not to thick, add the sliced potatos, mix well. Add salt and pepper for taste and white vinegar. We called it potato stew, you can add sausage, ham or what ever you like. I love your story and the way you cook for your family.

Been watching your videos and you, dearie, have what I call “gumption!” Thirteen years ago I got my “head screwed on straight,” and am trying to make up for lost time. Cooking skills are serving my family well. It’s amazing how made from scratch, fresh food tastes so good and is so healthy! I’m proud to say that my 18 year old son (graduates HS this spring) enjoys cooking with me. Dear lady, I will indeed laugh at you, but only when I am perfect. I am 70 years old, I have been cooking for myself for fifty plus years in good times and bad. From slow roast garlic beef with roast potatoes and seasonal veg, to sling what you have in a pan and make a soup. And I am still learning and still finding new things, and I am nowhere near perfection, maybe when I get to 100 I will be close, but the more i learn the more there is to learn, so welcome to the journey you have started, keep learning, keep sharing and you will be amazed the pleasure it will bring.

Oh I had to put on the closed caption to see if I heard you right. I am Lebanese (in MD) and it is some of the best food in the world. Try hummus and make your own salad dressing (2 lemons, olive oil, crushed garlic and salt). You will never use a bottled dressing again! Everything looks delicious.

My goodness that dinner looks delicious. This was so relaxing to listen to. There is something called absolute poverty. Those living on less than say $2 a day are in absolute poverty. But there is relative poverty - poor relative to your peers. And there are other forms of poverty that come from social exclusion. All forms of poverty hurt. And there is always something to be grateful for. I would love the recipe for that rub. Have a wonderful rest of your day. 💖

For folks who are struggling with the ridiculous cost of onions. You can plant a couple of the "teeny weeny" onions (yes even the 'rotting' ones) from a regular bag and snip the greens every few weeks to provide a lot of flavor instead of having to buy bags of onions every couple of weeks, that's what I do to keep costs down. Heck you can even plant them in large yoghurt pots or something of a similar size. The green leafy "sprouts" have a whole bunch of flavor!

I garden with my sister. One of the things we grow is chives. These lovely little plants grow and multiply each year. We chop and freeze or dehydrate them for winter use. A few years ago, we were overrun with chives. We gave them to her neighbours and pretty soon they were saying, "no,no, I don't need any more chives, look, they're in my garden, growing beautifully." One woman put them in her flower garden, because she liked the pretty purple flowers! Did you know that you can take clean, dry onion skins and grind them onto onion powder? The same goes for garlic skins. If you have e a vegetable garden, you can take clean pairings of things like carrots as well as herbs like parsm Basil, rosemary - basically anything you like, dehydrate them, grind them, and add them so some of your homemade onion and garlic powder, and blend them to a fine powder. Mix with a little salt and pepper, and you have your own, nearly free all-purpose seasoning! I hope this helps.

I greatly admire hard working people. I was living the same life 40 years ago. My special needs child excelled with a stay at home mom. I do not regret one day of “making do”. My children began their families the same , seems they were comfortable with raising their children as they had been raised. I am now retired and living a comfortable lifestyle, warm dry and never in lack of food.

Oh how many times I've been here as a single mom. Working three jobs. No family around to help when she was little. I made many "great depression" meals. Now my child is grown and we both contribute to the house. She has learned just how strong us women can be all by ourselves and how rewarding it is.

I am in my 60’s but I enjoy your videos so much. Your voice is so calming. Do you have time for any crafting? I crochet rag rugs and use them all over my house. We are retired and live in our little 900 sq ft cabin on the lake by choice. All our friends live in big two story homes. It just doesn’t appeal to us. We prefer to live simple. I just found your page, you are such a wonderful wife and mother. I was a young Momma a very long time ago, now retired and married 45 years. Cooking delicious meals is what I've learned all through the years. My children are grown with families of their own, I love being a Yaya. I'm going to try your squash soup, looks delish. I make what we've always called (sick soup). It's actually a zucchini and potato soup. It has roasted garlic, onion, potato. I use stock, and put olive oil while cooking, takes longer to peel the taters and zucchini than to cook it. Anytime someone got sick, they always wants sick soup. My daughter is 41, she still LOVES this soup, she's had some surgeries, and I've always brought her sick soup. I also put freshly grated Romano cheese. I look forward to more of your videos. My husband is very sick with cancer, I'm making a big pot of this soup tomorrow. I keep him fed with healthy meals. God bless you sweetheart, Happy New Year!

I adore split pea soup with ham! My husband and kids cannot stand it though, so I miss it. Maybe I will make myself a small pot and freeze some for lunches. It sounds so yummy for winter!

My husband doesn’t like beans, so on the odd occasion that we’re not together for dinner/an evening, I like to make myself a navy bean soup + tomato that I adore, and I’ll eat on it for a few days. I recommend making split pea soup for yourself when you get the chance! 😊

I am old enough to be your grandma, just so you have the age perspective. My family would have split pea soup only once a year, on New Years Day, made with the Christmas ham bone. (Ham was only once a year, too.) In my adulthood I have learned to make split pea soup a number of ways, not restricted to that Christmas ham bone! I am glad you wash your peas and rice, as many people do not know to do that. Thanks for your beautiful video and for sharing your wise perspective on life. I am going to make naan for the first time...

Hello from another WV mountaineer! Love your channel. Learning from Dave Ramsey allowed me to retire early from my nursing career. God knew I would need to be home to care for my elder family members. My mom has Parkinson's and mother in law has serious walking issues. Love serving my family, living my dream life on my small farm while gardening, dairy goats and chickens for eggs and the freezer. I rejoice in channels like yours that share my lifestyle and faith!

My grandma used to cook beef soup with lots of beef bones and lots of veggies and reserve the meat for dinner and for dinner time we have a different dish with the meat she reserved from lunch and we didn't have a refrigerator. My grandma was wise beyond her generation,she was born at the end of 1800 and went to a lot of hardship and she never complained I admire her generación and my mother generación this were very strong women

I agree with you we each have are own trials. Growing up in a family with 15 children with a single parent life was hard. Naan is so very tasty, I totally agree!! Its the dishes that are so simple that take love and time that always turn out so amazing and ones that we choose again and again to make. I have just tried doing a turmeric chicken tights with sautéed onions and kale over rice that was a big hit with my family. It also was nice because I did it all in the same pot which made the kale and stems very tender. Thanks for share you time!!!

Laramie, you showed up today on my You Tube feed and I have been binge watching you. I am 70 years old and as a single young mother of two, I worked my booty off to provide for them. I definitely know how to stretch a dollar. I have been raising my 32 year old special needs granddaughter most of her life and I still take precautions to make sure we have a roof over our heads and food in our bellies. I admire you and your husband for knowing that God and family are what is truly important! I do wish I could tell what ingredients you are using, but because you don’t tell us, although I do make homemade naan, most of the time!🤣❤

I got a kick out of it during covid when fast food and convenience food wasn't readily available. I was shocked by the amount of people begging for help on Facebook asking how to bake a loaf of bread or make homemade mac and cheese or pizza crust. 😢majority of people do not know how to cook if it doesn't involve removing package or popping it in airfryer or microwave

I am so inspired by you and your sweet spirit ! I am leaving the corporate world to stay at home with my two (soon to be three) children. I have always loved to cook and care for my home and family but have also had full time job and expendable income ever since I’ve been a mother. This has left me feeling like nothing gets my full attention and I feel I’m missing out on giving my family all that I can. I am married to an Indian guy and his culture opened my eyes to the many delicious food one can make on a budget. Check out the recipes ‘bhaingan bharta’ ‘aloo mattar’ ‘aloo gobi’. They are all nutritious and easy to make along with the many lentil and beans casseroles they have. During the pandemic, when shopping was an issue..our stockpiled lentils saved the day everytime. I came from a culture where meat is eaten at every meal, although my original country of origin is also of the third world. Back when I was growing up in the Philippines, a ‘lean day’ meal is eating what one grows in the backyard. We grew vegetables like moringa trees, sweet potatoes, pumpkins, okras, eggplants..and these veggies were cooked with a piece of fish filet, or dried fish, or minced meat. It was a rare treat to eat chicken all the time in those days..or pork curries..or even pizza ..but we never felt the lack. Food was always plenty and we were always snacking on fruits and bread in between the main meals. We raised chicken in the backyard and have the eggs for free. My dad owned a piece of land that grew rice so we also never bought rice. Now that I live a good life in North America, I know I can live even if all these material comforts are taken away bec I knew how it was to live simply. And I know life can be good at whatever station you are in life as long as you have loving relationships around you and you take care of yourself not to be handicapped by any kind of addiction that prevents you from living your best life.

So nice to see you making some yummy naan. There are ways to eat healthy and nutritious meals without blowing the budget and i am glad you are sharing you knowledge to help people! Rice, beans (black, chickpea etc.), lentils (there are so many different kinds if you visit the Indian stores), whole wheat flour are all great, nutritious and affordable options! Meat can also be bought in bulk when in sale and fresh veggies are more healthy and better than canned ones!

I just found you! I’m so glad I did. We have an empty nest. I’m 64. We have been blessed with a PRECIOUS, BEAUTIFUL granddaughter (22 months). We raised our kids on one income. We homeschooled. I dabbled in canning food and gardening, but in the last few years, I ve learned so much. I enjoy your videos. I really love how your Faith has taught you to trust the Lord for guidance. I always used to feel bad that our house isn't all pristine and newly decorated with nice new furniture that matches when compared to other peoples in our lives. But then I found out how much debt those people in my life were in, and while yes our home is a little dated and worn in places, it is our home, we have heating and food, it is clean and secure, we have no debt, our mortgage will be cleared 12yrs before those I was jealous of. So now I choose to be grateful for what we have and not jealous of others.

A cheap meal my family has been enjoying a lot lately is Zuppa Toscana. I brown onion and italian sausage in a big pot, then add chicken broth and potatoes. When the potatoes are done, add kale and milk and turn off the heat. I also like to add fresh garlic, red pepper flakes and parmesan cheese, and serve with crusty sourdough bread, but you don’t have to. I’ve also made it with ham and hamburger instead of sausage, you can add bacon, I’ve made it with collards instead of kale.

LOL I just made this but I use my crockpot. I use my crockpot so much in the winter! I even use it to make spaghetti. I put raw hamburger in with four cups of beef broth pasta sauce seasoning and add the pasta a bit later. I also add veggies like onions and peppers it just depends on what I have on hand. I like being able to dump and go. Another cheap yummy one is Dominican beans and rice. main ingredients are cilantro, pinto beans, and rice . I make the beans in the slow cooker and the rice in the rice cooker. My time is free to do other things! You can google how to make almost anything in the crockpot it seems!
