I just love how you can see how passionate he is about what he's showing to the viewer, and this is so much more engaging than just a recipe book. It doesn't show everything mathematically, he's giving clear, concise reference points which are fun to try and replicate while cooking. Things might go wrong and your outcome isn't as good the first, second or third time, sure, but it helps you at getting that "feeling" when it comes to measurements and how your food should look that most people observed their mother or grandmother having.

Just a little addendum to this comment section. Feel free to ignore me, but do try not to listen to anyone like this Michael Carlock bloke who tries to tell you exactly what to do with your life. “Don’t do this. Do that. This is bad. This is good.” If cooking is your passion and you’re sure you’re ready for the hard life of the culinary arts, then I say go for it if you want... I hope you live a truly happy life, my friend. Cooking is an art for all the senses. It is wildly fulfilling. Is it hard? I imagine so. ( I also aspire to become a cook, so I’m not quite sure, yet) perhaps Michael tried cooking as a career and hated it, but this only means that cooking was a bad career path for HIM. Not you. Everybody is different. Michael must know this by now as he does seem to have quite a bit of experience, I just hope he doesn’t continue to carelessly trample upon the dreams of happy commenters . Essentially, don’t let people tell what is best for your life. Only you know that. Have a good day :)

Luke Medina lol he doesn’t just use salt and pepper he uses garlic, butter, olive oil, onions, peppers, fresh basil, thyme, rosemary, etc.. The extra seasoning is not always necessary when you have fresh herbs and veggies. But he was using paprika in one of the recipes too.

Pro tip for anyone, but Gordon Ramsay's christmas turkey recipe (bacon wrapped lemon citrus turkey) with dry apple cider tomato walnut gravy is RIDICULOUSLY good. I cook it every year and it blows people's minds every single time. The best one yet was the one we brined first. It was just insane. Don't sleep on that acidic recipe. Moisture levels are out of control with that butter and bacon wrap.

That last one... I have HIGH expectations for that. I do something very similar with pork, but swapping tomato puree and red wine for shallots. The resulting gravy is divine.
