Whomever would make fun of your wholesome American accent is simply jealous. This recipe looks great! I have not seen crawfish for sale but will start looking for it. This would make a dynamite pizza. For what it's worth: I have been remarkably more healthy since I started making and eating sauerkraut. I used to catch every cold or flu going, had chronic bronchitis for five years. All gone since I started this habit. During the past winter, I have not had so much as a sniffle or cough. Not sure how it works but the effect for me is miraculous. I hope this is useful information.

If you were in the New York Metropolitan area, your pronunciation of "garlic" is just fine. Maybe the people who tell you otherwise are from places like Massachusetts, where they pronounce their As differently.

You could use crab meat as well or lobster! As far as texture it could change it a bit if you over cook what you're adding but I don't think it would change it much!
