She should definitely highlight non animal product meals to get the best results. Otherwise she's suggesting meals that actually starve human beings to create. People don't seem to realize that to make animal products we have enslaved entire sections of the planet and are directly responsible for global starvation despite growing enough food for 10 billion people. The best way to help people with food insecurity is giving them as many environmentally friendly options as possible, not just the cheap bs. Coming from someone who spent a long time being homeless and forced to eat scraps of crap rather than actually healthy meals.

there are rubber ice trays that you can get that have tiny squares you fill up and break out when they're frozen. a little time consuming but really worth. I'd get multiples tho, so you always have a back up.

It’s not that hard, unless you’re talking the popping bobas, then we’re getting into science experiment territory. No, cuz I understand Julian so much when he was talking about texture!! I can push through not having the best taste as long as texture is good but not the other way around. Similar thing happened to me with a tofu recipe and the texture turned from crispy to soft so fast that it made me sick 😭 I forced myself to eat as much as I could to not waste food but ended up having to toss it anyway.

for the corn recipe, there is a very popular indian bar/pub food which is simply called crispy corn. you coat the corn in corn flour (i think, or rice flour) and fry it, then remove it all in a bowl, add whatever spices you'd like and give it a good toss. super delicious. Also with the potato pancake, another recipe to try is aloo paratha. common breakfast in north India, its like a flatbread, stuffed with mashed potato (that has been seasoned well with salt, chili powder, onion, cilantro, turmeric) and its paired with raita (yoghurt based dip).

Best fried veggies are mushrooms. You use the cheapest mushrooms, the button mushroom and take the stem out. When it fries the moisture comes out and leaves mushroom soup in the cap. 10/10

Are the cinnamon rolls by Vegan Richa? She has a lot of GF recipes! Also, re: the lobster mushroom, it's actually quite common for people to respond differently to different mushrooms. When foraging, it's always recommended to eat a small amount first to see how your body responds. Digestion issues are incredibly common with certain types of mushrooms, so it could be that your body has issues with lobster mushrooms, but not other types of mushrooms. In fact, 'lobster mushrooms' aren't so much a type of mushroom; they're mushrooms that have been affected by a secondary fungal infection, so it could very well be that your issues are due to that secondary fungus, not the mushroom itself. If you've had oyster mushrooms before without issues, I wouldn't worry about it too much.
