Lulu, I appreciate SO MUCH for all you have shared with us❣️I have learned a LOT from you and you have emboldened me for van life, not just van TRAVEL; depending on Motels and fast food or truck stops for my meals, other than peanut butter sandwiches and apples❣️🤗😁❤️🌸. I am 10 years older than you and you’ve shown me a much BETTER and HEALTHIER way to eat❣️I was gifted an Insta-Pot from my kids, but have never used it. Now I’m emboldened and informed how to use it❣️ Now I know how I can eat while I’m traveling to visit my four surviving siblings that live in Washington, Michigan, Colorado and Texas, and my many cousins in Oklahoma and Iowa, and good friends in Indiana, Pennsylvania and Montana.❣️That should keep me busy, but I have ALWAYS loved to drive. I think you're doing a great job filming your channel and you learn more as you go. I would never have the time and patience to do a channel. I enjoy Katie Couric's channel. She just did a great interview with Dr. Mark Hyman and discussing longevity. She mentioned how she would like to hear about these topics from a woman's point of view so he recommended Morgan Levine, a Yale proffesor. I found a great interview of her done by Dr Brad Stanfield on KZbin. Love that we can find these discussions for having better health. I think you'll be one of those ladies to make it to 100+ years, your'e on the right path.

Dear LuLu, Love all your videos. You’re such an inspiration! Love your positivity … everything is doable if you set your mind to never giving up … By the way, since you’re eating so so healthy and use instant pot for your cooking, I think you should also consider some dried beans in your menu. You don’t have to store them in your cooler, you just use your instant pot to cook them anytime you want and they’re a very good source of proteins/legumes. I love chick peas, lentils, quinoa, …, very tasty for salads. I really enjoy your videos. Thank You for posting them regularly. Take care and God blessed … ❤❤❤

it really isn't that complicated, just cook separate things and use all the cooked things to put meals together. it doesn't have to be complicated recipes. I never ever make recipes!!

Go for it-I’m 79 and 5 years ago I bought a small van and spent 10 months going east to west and back and up to Canada with my camper kitty. My only wish is that I had found Lulu and her wisdom and creativity before. It would have been a much more organized journey!❣️

Looks awesome! I would maybe consider moving the pressure cooker down to the end of the table. That way when you release the pressure all of that moisture doesn’t go into the van and potentially cause mold. Other than that I love this set up!

yes, I do rice and sweet potatoes in the pressure cooker all the time, I just didn't do them in this video, but will another time!! and everything I cook in the pressure cooker I could cook on the butane stove if I didn't have the electricity. perhaps I'll do videos on that too!! Lulu

Two things - One is that I love your accent and I have been wanting to tell you that I knew from your accent that you were from New England. My husband grew up near Boston, in N. Abington. He had moved to Texas A few years before I met him so, his accent was Texifiied!! His brothers still live there and I get lost in conversations due to listening to their accents. Two, is that. Hi LuLu, I love your set up. The bed, with slide out table, your shelves on their sides with the fabric bins in each cubbies. Looks simple but definitely works. I’m excited to tell you that I finally got around to buying and eating for lunch today- the Japanese sweet potato’s. They are very good!!! I think their texture more resembles a russet potato rather than garnet yams which can get mushy. I cut them in half tossed in olive oil and roasted them in the oven then seasoned them before I ate them. Yum. I got a whole bag of them at the Trader Joe’s

Love your videos. Love watching you cook. I am a simple cook. Not anything too complicated. I don't make recipes, just mostly throw things together. I love Brussel sprouts but I bake them in the oven til browned and crispy. Love that flavor. If I cooked them til just bright green (which is healthier I know) I'd have to put something on them in order to take the dirty sock taste away LoL Maybe a little drizzle of acv and maple syrup.. I've never cooked Acorn squash but may have to try that. I do love summer squash I think it is, baked in the oven. Thanks!

if there are chickens close to you. you can give them your pieces of veggies to cut off .there a great snack for them. I feed out chicken all the time. I go to Grocery outlet or sharp shopper and bags of small pieces of kale in bags and feed to them in the winter when we don't have anything from the garden to give them. Do you cook enough for a couple days at a time? Have you thought about getting a electric skillet? I love roasted Brussel spouts . I don't care for boiled or steamed. those two things happen because not enough water and second it turns off for your safety . instead of exploding 🤯 🤯. Lulu your so smart! I quit buying acorn squash because I couldn't safely cut in it half. BUT you cut it different then me. Mine use to roll all over. and I'm not good at using knifes I cut myself.... Do you know your lid sits in the handle of the cooker? that way you don't have to find a place to lay it down. how often do you take the rubber ring out of your lid an wash it?

hi Hazel!! the chickens are on the next property over! yes, I always "batch cook" enough for a few days. no, I haven't thought about getting an electric skillet. hey, thanks for the tip about the pressure cooker lid that sits in the cooker, who knew? I have never wash the rubber ring separately. Lulu
