Cooking with Baba Asad | Our Thoughts on Palestine

Palestinian Kufta Recipe//
Ingredients:
2 lbs ground meat (We used a mix of buffalo & lamb)
1 bunch of Italian parsley
2 medium onions
2 tbs of Arabic mixed spices (seven spice)
Salt to taste (1 1/2 tbs)
Pepper to taste
3 tomatoes
3 yellow potatoes
2 tbsp tomato paste
Olive oil
Directions:
Heat oven to 400 F
In a food processor, finely chop parsley and onion
Mix ground meat with the parsley and onion mixture
Add spices and salt to the meat and mix
Press meat mixture into a 9 x 13 baking dish
Slice fresh tomatoes and potatoes
Season sliced potatoes with olive oil, salt and pepper
layer tomatoes and potatoes on top of the meat
Bake at 400F for 30-35 mins
Once finished, separate the meat broth from the pan and add 2 tbsp tomato paste to the broth, whisk together until smooth to create the tomato sauce
Pour this tomato sauce over the meat. Serve with rice and enjoy!

Thank you baba and Leena ❤ this is how I grew up in lebanon I fasted during Ramadan and celebrated Eid with my Muslim friends and they celebrated Christmas and Easter with us. We can live together it’s possible. Lebanon alone has 18 religions. We all want peace because we are peaceful people ❤🇵🇸

On the IG eye of Palestine page, they published today that the October 7th deaths/casualties were not singularly down to Hamas. As a British Bangladeshi, I often hear the stories of genocide and mass rape of Bangladeshis by West Pakistan in 1971 because my very recent ancestors wanted independence and freedom from the oppression by them. Although we were not born then, there is generational trauma and pain that we carry. A lot of it comes from the lack of justice. We understand the pain, although the situation for Palestine is so so different with ongoing attacks and ethnic cleaning by Israel for 75 years. Enough is enough! Me and my husband are praying and making so much duah for Palestine and for this to end. We love our Palestinian brothers and sisters so so much. When one part of the Ummah hurts, we all hurt. I have been to Palestine and Israel as a child and I saw with my own eyes that I felt that the Israeli, I am sorry to say the Jewish people of Israel, were doing the same thing to the Palestinian people as the Nazis did to the Jews. That’s how it looked to me with no one telling me what was going on. Now, as a proud revert I am angry and sorry that this has been allowed to continue with the world turning a blind eye.

Loved this video! My family follows your family and love all of them. This video was so educational and I hope provides insight to all who watches it. I have always related to your family since I am American and married to a Palestinian man with 3 daughters. After watching this video and hearing your story we have more similarities! My husband’s parents also fled to Jordan in 1948. My father in law still has his home key thinking he would return to his home in Palestine. Inshallah this catastrophe ends in favor of the Palestinians.

Thank you to you Leena and your Baba. It’s so important to share the stories of people’s families who were and are affected by the Nakba and what is still happening now! I don’t think people realize that there were Jewish, Christian and muslims all living together in harmony before the 1948 Nakba. It has nothing to do with religion it’s about occupation and apartheid and absolute disregard for human life and rights.Thank you for sharing your knowledge and food. I miss my baba. He was the best. A learned man who taught us to fish and swim everyday after school! Took a road trip to several countries just in a moments notice. This was growing up in the Middle East. May Allah have mercy on our parents Ameen. We are blessed to have them as we see so many orphans created in Gaza. Which is the hardest thing for me. My dad and his siblings became orphans overnight due to conflict in the 40s.

What an emotional time we are living in today our community is hurting truly our worlds have all been effected by these tragedies and I don’t know what normal will look like for us knowing that this happening. Leena, thank you to you and your father for this beautiful video.
