Absolutely! I'm a Cultural Catholic who loves ethnic foods. What Jewish foods I've been lucky enough to try, I like very much. Well, most of them - not a big fan of jar fish. ;-) I'd love to learn more about the foods & traditions of a Jewish kitchen.

we love Manischewitz as well, but as a personal favorite I like the Matzo's from the Yehuda brand better, I find those more toasty, what's your opinion? The osem I find thinner... The Manischewitz are better to make the matzo balls though. Anyway... hihi... Just felt like dropping a short reply :o)

WOW, in Romania we have something similar to these mazza balls, we call them meat balls, they are boiled and we eat them with clear soup, usually meat, (meat, rice, onion, pasley and rice, salt and pepper, eggs) I always wondered where they came up with this because i didn't saw it in many nations, wanted to know the inspiration and now i know. This is AMAZING. I NEEDED MORE VEGAN INSPIRATION, THX.

I remember baking a matzos lasagne decades ago from a Rakusens recipe book. It was a little different as I had to disk the matzos first then gently squeeze it out to make it soft like normal lasagne.

You can also eggplant for the lasagna noodles. You need to Pillage put it in the strainer with layers in between with salt but it sit for 20 minutes then put it in a skillet lightly cooked just enough for most of the liquid comes out then just start using it like you would any lasagna noodle in your recipe

Josie's Journey Matzah balls are made by mixing matzah meal (finely crushed up matzah) and eggs, rolling them into balls, and cooking them in water/in a soup. The texture usually ends up pretty light and fluffy, and a little “grainy” ie. it’s not doughy.

I'm Polish (and a lot of other things, but Polish and Scottish are the 2 that were drilled in my entire life) and I married a Korean. Koreans are known for the amount of garlic they eat, but he didn't realize Polish people easily double when I made him eat half a roasted clove as I was only 3rd whole clove. Garlic is life

Shalom. I made this yesterday and it was so delicious. Even my meat loving husband loved it. I used Chao cheese, zucchini, and potatoes. I made vegan ricotta with almonds and nutritional yeast. Omg, I love you for this! Bringing back all the nostalgia from growing up. My grandmother used to make the best Matzo ball soup. I miss matzos so much. Living in Japan, makes buying matzos expensive and difficult.

apple preserves or even apricot jelly instead of apple juice may make the sauce thicker (I'm not positive)

It will make it thicker - there will be less liquid. The jelled fruit will also thicken as it cools a bit. The jelled fruit will also add more sugar, so adjust your seasonings accordingly. A bit of lemon juice might help offset the additional sugar. Even something like a white balsamic vinegar would be tasty. But only a little bit at a time! Taste after each addition. Bon Appetit.

Don't know if will read this, Mayim, but when I make my white sauce eggplant zucchini matzah lasagna, I swiftly wet my matzah with water first before layering it in the dish because I don't like my lasagna crunchy. However, that's a personal preference.

Love it! Our Eastern European heritage must be from different shtetles (villages)... I've only known Tzimmes to be sliced Carrots cooked with Honey and Raisins...never Beets or any other Root Vegetable. I'm even going to add a Roasted Parsnip for a little spice. So, although not Traditional to my "Roots", it sounds so good. I can't wait to try it. In fact, I was never a fan before. It was way too sweet. The Apricot seems like a nice flavor. Thank you for sharing!
