Instead of using paper bags or towels to drain them, I have a splatter screen that I put over the pan during cooking. I take the latkes out of the pan and put them on top of the screen. That lets the oil drain back into the pan and keeps the latke warm.

Oh my goodness I love this video! We are not Jewish but started celebrating Hanukkah about 3 years ago at an event in our city. My daughter asked if we could celebrate the holiday after learning about it at school. We learned about the history and celebrate it every year now so the traditions are very new to us. We missed the event this year so we will recount the Hanukkah story and I will celebrate at home with my children. They look forward to this every year now. I hope this does not offend you but as Christians we believe we serve the same God. I grew up watching your show and loved it. From my family to yours. 💗💗 Alicia

Just for scientific accuracy: Chives are not "baby scallions", they're a different species: Both are of the genus Allium, but Chives are A. schoenoprasum, whereas Scallion refers to several other A. species, like A. cepa (which is also the "regular" onion) or A. fistulosum. And to add some personal experience, my grandma grew both in her garden and chives never turned into scallions when she forgot to pick them ;) p.S. Love you, Mayim. Happy Hanukkah!

Giedre Antul - The reason is that the Jewish people have moved around the world for the better part of two thousand years. And, wherever the Jewish people settle, we pick up recipes and customs of the people we settle near. Latkes (potato pancakes) are popular all around the middle and eastern European area, so of course we're going to adapt it and include it into our traditions. We also snagged Schnitzel from the same area as well. (Although, we use chicken cutlets instead of pork.) With a large amount of Jews living in the US and Canada, doughnuts are becoming a popular food for Chanukah, because they're also fried in oil. Also, the potato wasn't available for thousands of years, seeing it hails from South America. More like the last 500 to 750 years.

chives don't grow up to be scallions, they're the same genus, Allium, but different species. A number of Allium species & cultivars are grown for scallions, and it's fair to say chives are LIKE baby scallions, in that you eat the leafy part and they taste oniony and are green (technical terms), but chives are a distinct species that stays small and grass-looking (technical term) and doesn't grow a big tasty bulb anyway actual neuroscientist Mayim Bialik counting aloud so as not to lose track of six is the most relatable ever and I for one am grateful

My family is not Jewish, but my sister has been making latkes every Christmas Eve for years, just cuz they're GOOD. She makes them from scratch: shredded raw potatoes, onion, egg. I think there's still no better topping than sour cream or applesauce, but I've recently added homemade spinach dip to the choices. Nothing beats using fresh ingredients, but the Maneschevitz mix is a good product for what it is. Keeps a while on the shelf and whips right up when you want a fast treat.

@@fzzypurpleturtle Is that cool, or is that cultural appropriation? Kate Ross to get technical-my mom quietly observes it because some Christians believe that Jesus was “conceived” during Hanukkah because that’s the winter solstice and I believe Jesus was actually born in August or September. Also,God states in the Bible that Jews are the chosen people, so some Christians are fiercely protective of them. I’m highly aware of cultural appropriation but I don’t think that’s what she’s doing. @Abby Schneider It’s once a year. Also, the other end of our culinary spectrum is matzo, bitter greens and horseradish. I feel like they balance each other out.

I was wandering through the store the other day and this exact latke mix was on sale, so I got a box. The texture isn't what my grandmother made, but the taste is pretty authentic.

In Poland it's just an everyday dish called Placki ziemniaczane usually we eat it with either sugar on top or mushroom sauce

That sounds delicious. Shouldn't be hard to find here in New York. Mushroom sauce!

In Germany it's pretty common, too, called Reibekuchen. You can always get it on Christmas markets with apple sauce. I guess it's common all over central Europe, so not surprising the Ashkenasi community has their own spin and purpose for it!

Is it ok if I make those for Christmas ? I really am challenged when it comes to holidays being vegan in a non vegan family and these look so appealing ! Thx for the idea :)

Mélissandre L. If she's vegan, don't give her a recipe with egg Duh. I'm Vegan, but my mom has never made her Latkes from scratch with egg... if you want the recipe, just reply to me here 🤗 as long as you appreciate the life saving oil you're cooking them with, that's basically the spirit of Hanukkah 😄 Also I've had to cook Vegan holiday food for awhile if you want any other adapted recipes!

Okay, I have serveral things to say: 1. try a couple of tablespoons of ground (not whole) chia seed mixed with water and let it firm up to egg consistency. How much water? Not sure, just play with it. I have found that this equals about two eggs for baking recipes. You'll love it. 2. Next year you will have the time to grate a potato and chop an onion since "the show" will no longer require so much time. 3. Chives are chives -- they are not baby scallions (hello? Botany? and you thought it was fluffy), and finally, a question, are you related to the poet? Happy Chanukkah, or as my people say, Happy Christmas Harry.

I'm Cuban and my family makes something like this. We make sweet ones but most commonly make them with bacalao (salted fish/cured fish?). I know it may sound weird but it's delicious.

I've never tried the boxed version, now you made me want to go out and get it, more reasons to go food shopping which I love. I haven't made latkes in years, so I will give these a try. I'm all about easy, simple recipes, the simpler the better. If I see something too complicating looking, I think, Noope! and move the hell on. I'm of Italian heritage, so I may put some kind of grated cheese on top when they are almost done frying. Love your sense of humor, keep Youtubing! Is that a word?

I love all things potatoes! I make latkes with shredded potatoes (if I'm lazy, I'll just get frozen hash browns), onions, eggs, salt and some other spices, fry them up in oil and butter and serve them with applesauce and sour cream. Ill be fancy and top them with creme fraiche and caviar or top them with melted cheddar cheese, sour cream, fake bacon and chives for a loaded baked potato sort of thing, or a mini burger patty, ketchup, mustard, lettuce, tomato, cheese, onion, pickle and top with another latke for a mini cheeseburger kinda thing, or cream cheese, smoked salmon, red onion, egg, capers, dill and salmon roe for a latkes and lox sorta thing.
