Kristen....I'm not one to comment on videos, but I wanted to take a moment to tell you thank you. You have forever changed my family for the better. You have not only taught me how to cook, but to feed myself, my husband and two daughters healthy meals they love and I'm proud of! We are better (in more ways then you can imagine) because of your channel. I found your channel about a year ago. I was a newer mom and wife...had just completed 3 spinal surgeries and found myself extremely over weight. No diet I tried worked...until I stumbled across your channel. I've never made crème brûlée prior to about a month ago (and never ate it before, either), so I've never made it with real sugar, only keto. I do it with a sous vide cooker, and boy is it creamy. My wife has difficulties with erythritol, so we're all-in on xylitol, which doesn't get crispy - only sticky - when you try to crisp it up (I used a torch), so we skip the brûlée part and just do the crème. It is still terribly yummy - smooth and creamy and delicious!

You strain the mixture to remove any egg that may cook with adding the hot milk. The water bath protects the egg mixture from hot direct heat and creates a creamy end product just like you bake a cheesecake in a water bath to produce a creamy textured cake.

OMG creme brulee is my favorite dessert of all times... every time I go on a cruise I order creme brulee no matter what the dessert is on the menu that night, my waiter would have them make it for me even if it wasn't on the menu. Then in the buffet dining room they had these meringue pasties shells with different filling... OH MY.... sugar rush....it would kill me now to eat one of them....LOL

Now about the water bath...I was always told the water bath was to keep things like custards, and cheesecakes from cracking....don't know if it matters with sitting in the bath or just next to makes a difference but looking at yours doesn't look like it. After watching several of your videos, I have a question: Have you done a nutrient analysis of what you and your family eat in a day, week, or month? From the videos I've watched, there's lots of mayonnaise, heavy cream, eggs, some refined flours, pork rinds, ground beef, bacon, cheese, etc. The recipes have been for pizza, pancakes, ice cream, and creme brulee, among others. Now, I haven't watched all of your videos, but the ones I have seen are lacking in vegetables (both amount and variety) and I've seen no fruit. So, I'm just wondering about the variety of vitamins, minerals, and phytonutrients in your eating plan. Or, if this is covered in another video, I'd be happy to watch it. Thanks for your time.

This would be sooooooo much easier using a sous vide water bath. Just mix all the ingredients, put them in the jars, cook at 165 F for 90 minutes, and viola.

all you're suppose to do is temper the eggs so they dont cook then pour the egg mixture in to the rest of the milk and cook
