Pandan chiffon cake
Ingredients
100 g Cake flour
1 tsp baking power
40 g Sugar
1/4 tsp Salt
50 g Vegetable Oil
40 g coconut milk
30 g pandan water
4 egg yolks (m)

4 eggs white
50 g Sugar
1/2 tsp Cream of Tar Tar
===========
pan for 7-8 inch
Bake 160 c for 30-40 minutes

I just made this cake and it was perfect on my first attempt! No cracked top and perfect taste and texture. I was pleasantly surprised as I have read a lot of people fail on their first try so I was a bit scared lol. Some tips I’d recommend though are to blend your pandan leaves as per recipe instructions with the full 250ml of water then after straining let it sit overnight in the fridge. The next day all the water will separate and you will be left with a layer of dark green pandan essence on the bottom. Pour off the top layer of water and use only the dark green essence on the bottom. It will be more fragrant and the green colour will be much more vibrant. My cake also took a bit longer to bake. Instead of 35-40 mins mine took approx 45-50mins. I baked at 160c conventional oven no fan with top and bottom heat on the second lowest rack in oven. Thank you for a wonderful recipe. It tastes better than the one I buy at the shops and the aroma when baking is divine.

Awesome recipe! Succeeded on my first attempt! The only difference I did was (after reading comments from all) blending 25pcs of pandan leaves (cut them as fine as possible) with full 250ml of water, then after straining let it sit overnight in a mason jar in the fridge. The next day all the pandan water will separate and left with a layer of dark green thick pandan essence at the bottom. I used only the dark green pandan essence at the bottom. My cake took a bit longer to bake. Instead of 30-40 mins, mine took about 55mins. Thank you so much for the wonderful recipe!

Thank you for sharing this amazing recipe! I have tried it 5 times to get it perfect using my Philip XXL Air Fryer and it tasted so delicious. My family loves it so much and keep asking me to make more. For those who wish to use an Air Fryer for this recipe, choose a 7” loose base cake pan. Do not oil the pan, so when you over turn it for cooling, the cake will stick to the pan. After pouring your batter into the pan, cover it with an aluminium foil and poke some holes. Preheat Air Fryer for 5mins at 160 C. Bake for 20mins at 160 C, remove foil and bake for another 10mins at 160 C. You will see a perfect Pandan Cake, overturn the cake for cooling. Enjoy your cake with your love ones.

Best recipe ever! I finally managed to get my cake out of pan without waist line and not shrink after cooled down. Love the aroma of coconut milk in the recipe! I use a chiffon tin and worked just as fine. Subscribed!

I have tried the same recipe thrice except each time I added more and more pandan water. 1st 30g , 2nd 50g , 3rd 70g. It all works. It’s a full proof recipe ! Many thanks !!

Thank you very much for your reply. I went ahead and only used 30g of Pandan water and the cake came out perfect and with the remainder of the Pandan juice I bake another cake the next day and was very impressed with the results. I tried another recipe on the same cake and I think I still prefer your recipe.

Tried out this recipe after 2 failed attempts from another recipe. What i did differently this time round was to ensure the yolk and sugar was whisked till very fluffy. Took a couple of minutes of hand muscles. For pandan juice, i let the blended juice sit overnight in fridge overnight and used only the dark extract sitting at bottom. Color of cake still turned out pale light green. For those who do not have cream of tartar like me, i substituted with same amt of lemon juice. Personally, i felt the sugar can be reduced. Happy with the outcome 😊

@@ivyzhou7154 You have different ovens and differences in how the heat is generated and distributed, which in turn causes the differences in temperature.There are conventional oven, convection oven, steam oven. What type of oven do you have? And agree with devilmez, cooking and baking is using your senses, especially your eyes here to check the oven.

I baked this cake for my husband on his birthday. Pandan cake is his favorite. I tried other recipes too but they were not as good as this one. First attempt was successful. The cake was delicious. I added frosting too. I used lactose free whipping cream and added some pandan extract and brown sugar. 😋 Super yummy. 👌 Thank you so much for the recipe. 🤗

My chiffon turned out great... I use self raising flour, doubled all the ingredients( but reduced sugar) to make a big n tall cake on a chiffon tube pan... My pandan juice made from blending the leaves with bit of water left overnight and use the thicker liquid at the bottom.. satisfied with the great outcome..vibrant color n texture soft n fluffy.. 160 degrees for 1 hr and 5 mins.. I think can do another 5 mins.. top craked but I m fine with it..a recipe to keep. Thanks

I always use the good pandan paste, as I have no pandan leaves in USA. Then I use the same amount of water per her recipe.

This is ready rich n nice. I replace part of my sugar with monkfruit n it state superb. But the stiff form from the white seem to b taking longer.

Hi, i would like to ask, do we have to put the pan up side down after baking as usual chiffon cake, ? In this video after baking you didn't put the pan upside down, my question is, will the cake shrink if i didn't put it up side down ?

@@myfun6 sebenarya baking powder ngak butuh. Asalkan telur putih dipukul.dengan betul, ada soft peak bila angkat. I dun use tartar n baking powder in chiffon cake. Invert it for abt 20mins after baking.

Just wondering as chiffon cakes usually use the tube pan to avoid cake sinking. This doesnt seem to sink after baking though?

My sponge cake below seems to be darker not sure if it is cooked. All the ingredients like coconut milk and pandan juice have to be room temperature? You place on the lowest tier for baking right?
