Great video. Best to add the rosemary late in the sautéing. By adding at the beginning, it’s likely to become bitter or worse, burn.

Tried this for dinner tonight with the garlic crushed but peeled and a non-stick pan. It turned out beautifully but i'm sure the browning would have been better with cast iron. Very easy, very delicious. Thank you!

This recipe was great for me. I did modify it by soaking the lamb chops in lemon and subbed rosemary for thyme. My wife loved it and it was her first experience with lamb.

Wow, I made this tonight and it was so easy and so good!! I got lucky, I was down to my last three cloves of garlic but I have a couple of rosemary bushes out front, it's so easy to just walk out and get some. The basting part is what I do when I make some other dishes. I made a nice rice dish to go with everything. I see another video on cleaning and seasoning my cast but my only problem these days is lifting it!!! Seems to be getting heavier every year!!

Oliver Petrovitch it's really easy to grow rosemary, next time try getting yourself a stem and just stick it right into the soil. Use a mini pot if you don't have space. Ta-da! A rosemary garden.

Hi, I have a question. I've recently got a grill pan (cast iron) but I have always seen that the best method of cooking a steak, or lamb in this case, is to use garlic, butter and rosemary (or thyme, I actually prefer this). The thing is, if I have a grill pan I can't apply this exact same method, and I've seen chefs doing exactly what you are doing but also recommending grill pans for "professional look". How do you apply the butter, garlic and rosemary if you are not using a normal pan?

Claudio Romero I assume you have this Lodge square pan goo.gl/IEf6sh ? I have not used one of these before, but I would imagine that you could tilt the pan to scoop the juices back on to the meat. If you put the butter, garlic and whatever herb in pan it should still cook off its flavor into the meat I would imagine. A few things I would try are: Do it the same way as a normal pan. Or put the garlic and herbs under the meat. Put in more butter to raise the level of cooking oil/juice. See if you can tilt the pan enough to get a few spoon fulls to baste the meat with. I would imagine that the grill pan would give some nice "grill marks" and you should be able to use it in almost the same manner. I have found that the best way is to try it; with some cheaper meat first of course =)Hope that helps, let me know how it comes out!

I'm just starting with cast iron (and cooking, just left my parents house a few months ago XD)... I should have bought a regular cast iron pan =/. I will as soon as I can. 2 more questions: I can't find that cast iron conditioner where I live so I'll use linseed oil (or maybe vegetable oil). Is it good to put them over fire outside? Or is the oven better to season them? The other question is: Are you using black pepper? I always hear "add some pepper" but I've seen more than one type..

Claudio Romero Congratulations on moving out, I wish I had cast iron and the desire to cook when I first moved out =) All cast iron is good. I love my griddle. If you are just cooking for yourself, just get a smaller 8" skillet whenever you can and you wont regret it. goo.gl/FdCyzB For oils, I would use flaxseed oil (which is the cooking version of linseed), coconut oil, peanut oil, sunflower oil, or good old crisco. I seasoned mine upside down in an oven at 350f (175c) with a light coating of oil 3-5 times. They should be solid after that. I would stay away from vegetable oil for seasoning, I have had a bad experience with that. I do use black pepper exclusively from a grinder and light sea salt. Both coarse ground usually.
