Absolutely related to this video. Been going down to the keys lobstering for over 35 years and all the grunts, snorkel words, reactions, all came racing back to me. I loved hearing your inner kid coming out with all of the delighted laughter you had as you hand caught those lobster! Seems like it was a pretty wild mini-season. I never knew about the lump meat in the antenna so thank you for that education. Steeping the carcasses in the cream was simply genius as well as using four really flavorful cheeses. That had to have been one of the most delectable lobster mac’s ever made!

for the knuckles, I find it easiest just to cut them in half with a chefs knife and just peel out each side with a fork. one of my favorite knuckle /tail recipes is to chop up some lemongrass, put it in a mason jar with butter and boil to infuse then use that for dipping /basting and take a piece of lemon grass and slice thinly to turn it into a paint brush and brush the tails or halved knuckles as they cook on a grill

@CookingWithClams I'm from Jacksonville, Florida but settled in San Diego after retirement from the Navy. I have 2 boats... a 19' bassboat that I use only in fresh water and a 23' center console for salt adventures. Diving for lobbies is really hard (with so many restrictions by the Navy, and SD Port Authorities as well as sealife preserves in LA Jolla, So much of our harvest (which is sometimes significant) comes from use of rigid hoop nets. Your (and Aaron's) mini season videos brought back many memories of diving in KW while in college and during weekend training flights during Navy flight training. I'd jump at every opportunity to take weekend cross country training flights from Pensacola to NAS Key West. There was always a 1 or 2 day layover and you could always find me in the water. Your lobster harvest success just off the bank in the mangroves transported me back to the mid 1970's like it was yesterday! Thank you!!! I NEVER miss one of your video postings and have enjoyed trying to replicate all of your recipes. I will close by saying I have adopted your careful (and thoughtful) use of every part of the sea critters we take locally and have benefited by increased chopping and chewing! CWC is a great channel. (Need to put CWC inside a clam shell logo on hats and T-shirts...like Aaron did with his KWW logo). Keep posting and your subscribers will grow!

Great job catching up the lobster 🦞. Making me drool watching you guys eat it. I would sometimes cut the lobster up into medallions and bread them with penko bread crumbs then fry them in oil. Just something different from the every day boiled lobster everyone else was making.

Good morning Will. Every time I see you and Arron with lobster especially your channel you all boil the heads for stock but thats it. Being from south Louisiana we make crawfish bisque. I have watched you make a bisque and it looked great. Well the point of all this we take the heads of the bigger crawfish separate the top shell from the legs and innards, There are tons of recipes out there for Louisiana crawfish bisque and how to make the stuffing, but we stuff the heads and put them back in the bisque. I would like to see your take on this done with lobster Wish we had ready access to lobster because I would love to try it. Unfortunately they are about ten dollars a pound whole here and ain't no cajun worth his salt would cook with less than 5 pounds of tails. Sorry for getting long winded.

I am in the same boat as you! Lobster Mac is never my go to. Growing up eating Maine lobster to cover up. The flavor at all is sacrilegious, but spiny lobster has a bit of a stronger taste. It’s closer to a shrimp in texture so my answer is yes definitely do this with shrimp, also I grew up in a Sicilian household where you never mixed seafood with dairy so to this day it still feels wrong. But this is a big but that lobster mac & cheese was so good it made me a believer

Great video Will! Love the laugh during your dive. Lol. Really appreciate that you use the whole lobster at least in one way or another. It really irks me that Floridians are so frigging wasteful with not only lobster but fish in general. I really love your channel for showing how to use seafood as a whole. Really like the idea of putting the roasted lobster body in the cream sauce. I always make lobster broth with my bodies and shells that I use. I’m not much for cream as I use low fat milk and broth in my cheese sauce. I just use more cheese. Lol. I do bake in oven. Sometimes with bread crumbs. Thanks for sharing!!!

WOW, Will I love Mac N Cheese, one thing I do different is I cut out the membrane from the lobster leaving only the lobster meat. believe me it taste better when you don't have that cheeky piece to chew on, also I put mine in the oven at 350 to brown the top. but I must say a great recipe.
