The way you flipped the chicken every few minutes is a game changer. I’ve seen far too many videos where the cook fries chicken in shallow oil and only flips it once and one side of the crust gets burnt and they act like that’s normal and O.K. I’m so impressed!!!!

The egg whites were a game changer. The crust was light, airy, crispy and just crunchy enough without being tough. The breading also adhered to the chicken perfectly! You won me over with the poultry seasoning as well. Thanks!

This is very good, detailed instruction. I do feel peanut oil is best. A large Le Cruset enameled cast iron Dutch oven is the best. The most important thing she stressed here is something most recipes don’t tell you. Start at 350, but temp will drop immediately. Keep it between 300 and 325. If you try to get it back to 350 you will burn the outside before inside is cooked through. Between batches get it back to 350. Also try to buy 2 1/2 pound chickens and cut them yourself. When you buy cut up chicken the pieces are from 10 different chickens that have been raised on different feed and will not cook the same, and some will even taste better than other pieces. You want every piece to be great.

I made the same mistake for 50+ years. Keeping the oil at 350 caused me to have burnt coating while internal temp was always 155 or less. I found a recipe that fixed that. The recipe called for using an electric skillet set at 325 & peanut oil. So, I went & bought one! And my chicken has been perfect ever since. The electric skillet has a larger heating element, so it's easier for it to maintain 325 & not have to have a higher temp to compensate for the loss of heat when chicken is added. I use between 1.5" to 2" of oil & fry the chicken for 12-15 minutes at 325. I only turn each piece one time. The coating is not burnt while internal temp is anywhere from 165-175. I was never a fan of using an electric skillet for deep frying until I prepared my deep fried chicken that way. I incorporated that electric skillet in several other of my recipes now. It heats more evenly & I've learned that I can reduce the heat setting by 25 degrees in many cases. The electric skillets are available in a variety of sizes.

Thank you Donna for this FABULOUS recipe! I only used 1tbl Lawry's and 1 tbl Tony Cachere's and brined it overnight. The majority of the flavor was in the juicy chicken and not the breading. I encourage your viewers to try this recipe as written. It is indeed restaurant quality!

I love fried chicken and make it all the time. My aunt told me how to do it a long time ago. I found that if you fry the chicken halfway and then put it in the oven and let it finish. It's so much juicier has so much more flavor give it a shot, you'll see what I mean.

First time on your channel and I was shaking my head during the first half of the video when I thought you were going to fry chicken at 350.But then you made a great point that once you add the first batch the temp will drop up to 50 degrees and for me that is the perfect temp. For me 300 is the fried chicken sweet spot. Done juicy and crispy, thanks for the video.

Very informative! Thank you! When my mom fried chicken, she would test the oil with the rounded handle of a wooden spoon. She'd stick the handle in the heated oil, and If it started to bubble up right away, the oil was ready. :) Best fried chicken ever! (rip mom- love you and miss you!)

That describes me to a “T” also. Additionally in numerous recipes although the coating looks good and has good crunch it tends to fall off in chunks when I bite in. This seems common with the traditional buttermilk and whole egg recipes and especially Asian type recipes that use a lot of corn starch with the flour. This is the first recipe I’ve seen that uses egg whites and water in the batter which makes sense to me. As for flavor - at first I didn’t use nearly enough seasoning. You need more than you think initially and this recipe seems to hit the bullseye. The marinating step also helps a lot. I’m going to give it a go.

I’ve watched a ton of fried chicken videos on KZbin and this one is easily in the top five best of all time based on appearance. I think that you are right on with the light egg whites and water wet part. Using whole eggs and buttermilk make a crust that’s too thick and dense. I can’t wait to try this!!!

Good old country cooking! Buttermilk provides acidity to soften the chicken, if you want alternatives, consider lemon or lime juice (or apple cider vinegar) but check your Ph level. We use celery & onion seasoning as well. Another tip is to swirl the chicken in the oil for just a second before letting go (just like deep frying battered fish) this prevents it from sticking to the pot.

I put poultry seasoning in my chicken also! I do like the egg white method with hot sauce for fish, or chicken tenders, it makes it lighter! I'm sure the season salt brine makes it delicious, but for me, I think it would be to salty! Looks yummy.

I am going to try this. I see many, many, many KZbin videos that have the chicken look like yours, but they must be going to KFC and buying chicken for their photos for their videos. When they go through their recipe and show themselves actually frying it, it always comes out burnt looking, or the batter is brown but smooth. Yours on the other hand, is something I have been trying to achieve for years and have failed miserably. I just watched you season, batter, and cook the chicken and I swear it looks just like KFC. Amazing, I mean amazing! To be honest, I told my wife I would be willing to go work at KFC just to learn how they do it. Now I don’t have too. Thank you, I did subscribe and liked. What else you got?

Hi Donna,,,,,, I have been working on my fried chicken game now for about 3 years and its been getting better and better. What I liked about your recipe and method is that it was " how you do it, and have perfected it through experience" Tried true and tested. Not "Hi guys and I'm doing this for the first time" Your recipe ingredience list caught my eye because it is very close to the Popeye's Copy cat blend. However It was ultimately the salt brine which intrigued me. I have already been down the buttermilk path and that actually doesn't deliver the taste or batter I like. I made your chicken last night staying true to your recipe. I brined it for 7 hours, premade my flour and spice mixture in the morning. When it came to dinner time we had our sides pre done and it made the chicken fry quick and easy. I followed the resting of the batter before cooking, I figured the Baking powder needed time to kick in and then fried it. I flipped the chicken just like you said following your temperature with the thermometer and you should of heard all the oohs and aahs from the family as I pulled the chicken pieces out of the fryer and onto the rack. I was so delicious and your coating quantity did 16 pieces with ample to spare. For the first time I feel like I have found the base foundation for my fried chicken recipe. I feel very confident that this recipe will be well liked by not only my family but also my friends. Just so wonderful. Thank you Donna and God Bless you as well :)

For YEAARS, I have complained that every. single. piece. of home. cooked. fried chicken never results in the same flaky, savoury crust as fast food faves. Hint for cooking thighs with the back quarter attached. Pop the thigh bone out of the back piece socket. It keeps the thigh flatter in the pan and thus cooks faster and evenly and allows any excess blood to drain out when cooking. Learned this when I worked at Bob's Big Boy in the mid 70s making Pappy Parkers fried chicken.

That chicken looks delicious. And it's so pretty. I'm definitely going to try this recipe. I sure do miss my mama's chicken. I can fix it the same exact way and it does not taste like hers. Chicken looks great!! .. im a perfectionist and i make alot of fried chicken and i got mine nailed down because i refuse to give up if it doest meet my standards. 😅 I just keep going until i get it right. Your chicken method is the same i use but with different spices and brining process. I dip mine in the egg whites first then in my seasoned flour. Yours is flour, egg, flour. Is that for a thicker crust? Sometimes i mix a bit of seasoned flour in with my egg whites and water for a super loose wet consistency. Comes out great like jolliebee's or Popeyes chicken! Thanks.

I like do dredge in flour then egg giving the egg more to stick to then dredge with flour again the more tacky the more crispy it will be and I so want to try jolliebee’s we got one here awhile back but I keep forgetting we have one here now🤣 thank you for reminding me❤️and thank you for dropping in your truly appreciated ❤️

I recall doing a brined fried chicken and the result was better than any chicken I had previously fried.
