I left out the buttermilk and used to pickle juice for brine for oven baked BBQ chicken. When I tell you that I cut that chicken with a spoon, it was that tender 😊

After you bread the chicken and let it rest, right before you start frying it, dunk it back in the flour. You'll get the crispiest chicken ever. First fry @325, second fry @375.

for thighs, i learned from an asian cooking video to cut a slit along the longer bone. helps it fry more evenly. that was a game changer

I knew a young lady who coat her chicken in yellow mustard. My grandmother used to soak her chicken in vinegar water. I heard of soaking chicken in pickel juice before. I really think it's the vinegar in the pickel juice or mustard that enhances the chicken.

Truth be told, I cut through to the bone like you do, BUT I continue to basically debone the thigh. Thigh is the best meat imo. Then save the bone for when I make chicken stock.

Tip: Potato starch would work better than corn starch. Corn starch makes the crisp feel powdery while potato starch makes it actually crispy. Use potato starch 2:1 ratio to flour to potato starch.

I watched a "best fried chicken 101 ever" video from Epicurious yesterday, a massively popular brand partnered with Bon Appetit. *They didn't even mention what oil to use OR what temperature to cook "the best fried chicken ever" at,* among other things. Absolutely unreal oversight (& it's surprisingly not uncommon). AB just does it better. My guy even checks his temp *throughout.* Stoked for his success, but man, it just makes all too much sense; it's simply more comprehensive & *teachable,* which is what a ton of people are here for in the first place. Just sensational work, no doubt, beyond compare & without reproach, always. 💯❤

thanks, AB. my wife's crust never sticks to the chicken - gonna try the buttermilk. we use scissors to trim. AND, do you ever use crisco.? crisco has 10% vitamin e and the taste difference is like night and day.

Hi AB, I would substitute half of that flour with rice flour for a lighter and airy texture to the crust. Moreover the gluten is what makes it greasy. Also you could have added a bit of that buttermilk brine into the dredge for a crispier crust and the buttermilk brine will benefit from just a half a cup of vodka.

Pickle juice is the best brine for fried chicken! I’ve done buttermilk and hot sauce too, but never mixed with the pickle juice. I’m definitely trying that now.

One of the reasons I prefer for fried chicken is Wings. Just clean them, no trimming. Easy for them to fry in the oil and imo absorbs the seasoning better than drums, thighs and breast. Less meat, yes but thats a great thing because the seasoning will penetrate the Wings better.

Great video another one in the book there are many ways to get to a destination some restaurants place the chicken in the refrigerator just so the flour adheres better to the chicken due to the moisture in the refrigerator but all in all great recipe but with those chicken scraps one day you can show how to make a Fond ?
