I’m 62 years old and I’m not criticizing anyone. My grandma made the best fried chicken I’ve ever eaten. All she did was flour, salt and pepper a paper bag lard and cast iron skillet. I wish I could go back in time and be in her kitchen eating her chicken and everything else that she made. I would tell her again how much I loved her cooking, and how much I loved her. I miss you grandma Irene.

Thats alright everyone has their own secrets My mother uses mayonaise, mustard, thyme, fresh rosemary, garlic, salt and pepper and last to the flour adds up garlic and onion powder OMG i prepared like hers but trastes different every perdón has their own seasoning and flavor differs don't know why. No see my mother always soak the chicken and milk 1st. To this day I swear that makes all the difference in the world.Ironically I used the identical seasonings Paula does, Or I should say my mother did because I make it the exact same way but I put them in the flour. Mine is the hot sauce in the eggs. (Edit, not sure what my dictation cut off, but I'd NEVER put hot sauce in...not a huge spice fan. I like flavor). .But as someone wisely said we all have our own way. I often with try something another way To see if I prefer it but personally I think my mother's fried chicken is perfect!And when I make it. It brings back such happy memories so this is 1 recipe as much as I adore Paula, that I won't be trying

I was at an Aunt's house and she had lots of company coming. She fried 1 chicken and I was shocked. Then she and her daughter in law put together a huge spread of salads and vegetables. And desserts. No one cared if they had chicken.

Since they took her off i was watching pioneer woman but now she has her kids all involved in video recording and i am no longer interested i think its greedy of her to make sure her older college kids are now horning in when ree drummond is married to a cattle ranch owner that owns half of thestate and land and they own stores in town that are huge tourist sites and their lodge they rent for weddings and they have a catering business a bakery a diner ree goes on food network bake offs and she has her own line of cookware and serveware in walmart stores come on! Does she really have to make sure her daughters who are attending university paid for no big deal and her own cooking show and she is supposed to be starting on a tv show soon!

When I was a little boy my Grandma always ate the back and the neck. I thought it was just because those were her favorite pieces. I didn't realize till I got older that she did that so the rest of us could have the good pieces. Even then she would always give one of us kids the "Pin cushion or Parson's nose." I learned more about frying chicken in 20 minutes watching this video than I have in 50 years of trying to cook it like she did. Thank you Paula. That chicken looked just like Grandma's.

My Auntie always cooked the backs and necks when all of us kids would go to her house in the summer. She did it because they were super cheap at the meat market and there were a million of us lol! My mom would always cut up a chicken, season it, and coat it in flour ! She would always fried it Crisco cooking lard ~ it was EXCELLENT crispy out side, and juice tender inside ! YUM I tried it way she done it, and NO WHERE AS GOOD AS HERS ~ HERS WAS EXCELLENT

I use buttermilk in my marinade and soak it in the fridge overnight. It helps the chicken to stay very moist.

375° is a helpful temp. Then only fry 1-2 pieces at a time rather than all at once. This makes sure temp stays right.

My mother taught me to fry chicken in a cast iron skillet and she never did a marinade and it was the best fried chicken. She used salt, pepper, accent and paprika. She would add the same seasonings to the flour, use a brown paper bag to shake it all up and fry in vegetable or corn oil because back then nobody ever heard of peanut oil. I love chicken backs too Paula and so did my mom. She's been gone 7 years now and I wish she was here to make some of her fried chicken and peach dumplings. Thanks for sharing your recipe and bringing back memories.

When I cook chicken I use about the same seasonings, but I add paprika and chili power, set the meat out and let it come down to close to room temp( cold meat seizes up and becomes tough when you heat it up). I use two cast iron skillets at the same time, one for the big pieces and one for the smaller ones, because they take diff cooking times and over crowding the skillet makes the grease bubble up and makes a mess.

I have made this twice and it is by far one of the best I’ve ever tried! I cannot keep enough of Paula Deen’s hot sauce, seasoning mix and now biscuit mix! Tomorrow, I’m cooking it again in my new T-Fal deep fat fryer with automatic oil cleaner built right in. There are several You Tube videos on this product, so I hope Paula Deen’s Southern Fried Chicken will be better than ever!

I cooked your recipe (with some modifications). Best fried chicken I have ever made! This is now a staple fried chicken go-to in the family! This was similar to my moms chicken. Very happy!

My husband was raised by his grandparents and they dressed and sold fresh chickens, also sold fryers as 2-1/2 to 3 lbs, never larger. Now they make them 7-8 lbs, tough old birds too.

Paula has 3 dogs and it’s so fun how animals can be such a hoot to watch in the house ...I’ve got 3 cats a very intelligent momma gray cat that use to be a feral I took in and her kids two beautiful black cats ...a tomcat and his sister a sweet female cat... it’s amazeing how their personalities are so different and how sweet and funny they can be interacting with each other .

We pasture raise heritage, slow growing chickens and turkeys. Out of 100 chickens, we harvest 50 at a dressed weight of 3 pounds, 25 at 5 pounds and the last 25 at around 7 to 8 pounds.

I’m just starting your video so I’m not sure how you do yours. I leave my chicken set out for about 30 minutes. Once I bread my chicken I sit it on a cooling rack for 10 minutes. I preheat my oven to 350, I line a sheet pan with foil and put another cooling rack on that pan with foil. I fry my chicken in batches. As I take one piece out I add another one to the frying pan and put the cooked ones in the oven to stay warm. By adding a piece as you take one out it keeps the oil at a more even temperature. And what you’ve fried is staying warm in the oven. I like just salt and pepper.

Thank you! My Mom taught me the same thing...buy small chickens! We are doing fine here in Conroe, Texas ( just outside Houston). Mom is 93 in Assisted Living . One lady was sent to the Hospital with covid, but is doing well and expected to be able to return soon. Love to you and yours

Ma'am Paula Deen I lost my mother when I was 12 so I never really learned to cook her favorites and my favorites from her but one of her dishes she called it chicken fricassee because she didn't know what else to call it. It was a greenish color with broth with a wonderful taste and then floated biscuits on top and baked until they were brown. Most delicious mean from childhood. Are you familiar with any recipes you make?

Fried Chicken. I love fried chicken. I will go out of my way for good fried chicken. In 2012 we traveled from the West coast to the East coast in our RV, taking 3 months from California to Pennsylvania, and back. Every where we stopped for supper, I would always try to order the fried chicken. Must have eaten over 30 fried chicken dinners. Here are the results: Tied for Number One; Paula Deen’s fried chicken in Cherokee, Tn. Definitely not a small chicken. It was only one half of a chicken, but had to get a take out for half of it. Very delicious. Also Tied for Number One; Loretta Lynn’s Kitchen in Hurricane Mills, Tn. We went thru the buffet. When it was time for desert, just got more chicken. No where else on our trip could anyone make chicken close to as good. Just for reference, as you go from west to east, the Fried Chicken gets better and the Chinese food and Mexican food gets worse.

The only thing I would change is use "buttermilk" with those same spices and let it soak for 3-4 hours. Then after you toss it in flour, let it sit on a wire rack to dry 10-15 minutes. Allowing the chicken to sit on a rack to dry for a few minutes, makes a world of differance, with helping to keep the crispy outer coating stay on your chicken. Also if you enjoy your chicken extra crunchy, add a couple tablespoons of corn starch in with your flower mixture. When your chicken is almost done, take it out of the deep fryer and put it on a wire rack to cool for 3-5 minutes, then return it to the fryer for the last 1-2 minutes of cooking. Talk about a great and crispy crust, this is how you achieve it.
