I most days have steamed baby potatoes in my fridge ready for use. I have never had aioli mostly because I don't like mayonnaise and I associated aioli with garlic flavoured mayo (though I think it is a dish / condiment that has many variants) Definitely worth trying this recipe to go on steamed veggies

I use silken tofu instead of mayo. I just add some mustard, lemon juice, a little bit of olive oil and salt and maybe some capers or their brine. It's really good.

It will keep for about 5 days. It doesn't really change once it's blended. You can always add a touch of extra plant milk to thin it out if needed.

I made your potato mayo awhile back. Very good. I think this one will be just as good. Love the add of the fart salt (that's what we call it at our house). What I love is this is a good Aioli to share with folks that also just getting started with plants. I find that fart salt really does taste of egg and helps with transition into more and more plant based meals. If that makes sense. Anyway, good recipe. I will try this one too. You come up with good short videos that make me want to try.

Omg it’s so cool that you created such a sauce from potatoes, thank you! Now thinking about it it makes sense as the cheese sauce recipe I use also features potatoes. I left out the turmeric for a more ‘white’ colour, then I paired this sauce with my oil free, low fat patatas bravas for breakfast this morning 😋

I made the best vegan Alfredo using this recipe! I always hate the standard vegan recipes that call for almond milk, it always tasted too nutty/sweet for me (i use unsweetened unflavored), What I did was I accidentally added a whole head of garlic instead of just 2 cloves while making the aoli, and I added only 1 tbsp almond cashew pea protein milk (silk brand) and then 1/8 (2 tbsp) cup of the water I boiled the potato in (for the starch that seeped out of the potato) and then I blended until smooth,(I didn’t have that salt u mentioned smelled eggy, or tumeric so I ommitted it) This made 65g Then I cooked my pasta, I was testing it out so I only did 1 serving 2oz pasta, 10g garlic aoli, A bit of pasta water, And 10g of vegan cheese (I use voilife Mexican shreds, my favorite vegan cheese, it melts and tastes the best imo) Black pepper and garlic salt to taste

Hi Anja - - this looks delicious, but help please. Right after the turmeric, you say what sounds like "you could also use besan" - - are you referring to chickpea flour ??? Except that immediately after, you mention some kind of liquid, "which would also be amazing". I listened five times and I couldn't get it, so I went to the recipe but it's not listed as a variation. Would it be possible for you to clarify ??? 💕

She suggested saffron soaked in a little water in place of turmeric. Both will give it that golden color.

Actually allioli is already vegan, like, the only ingredients are garlic and oil ("all i oli" on catalan, since it comes frome there) and salt (original allioli doesn't have any eggs). But I get the point of oil trying to make it a little less fattening and healthier. Also, it is done with olive oil, so I understand it can be expensive out Spain

Most things that aren't vegan have a vegan alternative, especially basics like yoghurt and cheese.
