I made this and it was tasty, but it didn’t give me the same mouthfeel as regular Mayo, and in certain applications I think I would be missing that. However, I added a touch of honey, a little extra oil, garlic powder, onion powder, and parsley, and it made a fantastic ranch dressing. I tasted it side by side with some store bought ranch and the version made from this recipe knocked it out of the park

Tried it. Add some dill and pickled cucumbers and you have original taste of tartar sauce. Add garlic and fresh cucumber and there's tzatziki. Great recipe! Bravo, Saša!

I use plain greek yogurt as the dressing for Waldorf salad (apples, celery, grapes or raisins, walnuts). So delicious! And BTW, making mayo at home using olive oil turns out bitter and inedible.

I learned from America's Test Kitchen that beating olive oil too much can cause bitterness. I don't know about making mayonnaise, but I once ruined a batch of hummus that way. Then I found out about over-beating olive oil, and now I add it last. Even if this tip doesn't help with mayo, I hope this helps someone with some other dish!

If I make mayonnaise I use avocado oil instead of olive oil. Avocado oil is tasteless. Olive oil can have a rather strong flavor for mayonnaise.

I make my own mayo and the only time it turned out bitter and inedible was when I used Extra Virgin oil. Now I use regular olive or preferably Avocado oil, perfect every time but I do like to consider swaps like this.

What a great idea and recipe. For my personal taste, I would mix in equal parts of tahini, or possibly some other nut butter. It would be higher in fats and lower in protein, but they would be healthy fats and it would be useful in its own way. Thank you for this thoughtful presentation.

Yeah, making this Greek yogurt mayo is a double win, and for duration, well I would say up to 2 weeks, but the more it is exposed to air (how ofter do you open the container), the shorter it will keep in the fridge.

I absolutely love this sauce! I have used it for burgers, tortillas and I'm going to use it for a lot more things in the future for sure. Taking into consideration the Star Wars mug you presented in one of your videos, I hope you won't mind that I named this "The Obi-Wan sauce". The story behind the name is short yet tasty. About month ago I decided to finally give Star Wars a try and watched Star Wars: Episode IV - A New Hope, I absolutelly fell in love. I made some tortilla chips with this healthy mayo to snack on during the show and now every time I taste this sauce only one thing is on my mind: Star Wars 😄 Hence the glorious name "The Obi-Wan sauce". Here in the US, for chips or vegetable crudite we commonly make a dip out of sour cream and either powdered onion soup mix or powdered ranch dressing. My fiancee prompted me to try making it with Greek Yogurt and it a wonderful low-fat, high protein alternative. I have also started making a pseudo milk for breakfast cereal by mixing 1tbsp Greek Yogurt with a 1/2tps honey and then thinning it out with water.

Balsamic vinegar works well, so does pickle juice. I use oil if I'm making it for others but leave the fat out for myself, it makes the texture a lot nicer but it's not bad the without it. Greek yogurt works as a replacement for sour cream as a condiment, I haven't tried to replace sour cream as a cooking ingredient though.

You can make mayo with any type of oil to avoid hydrogenated fat. It's simple and tastes great. Sometimes I mix homemade mayo 1:1 with Greek yogurt, that's very light and tasty.

I agree, to make a good homemade mayo it's best to use some organic eggs, but I think the problem is with oils you use. Vegetable oil - highly processed, olive oil - too strong, avocado oil - too expensive... so I choose Greek yogurt any day.

Well, the simplest, healthiest, and by far most delicious is homemade mayonnaise: quality organic cold-pressed oil - olive or other, free-range egg yolk, freshly squeezed organic lemon juice, and natural sea salt. Beat the egg yolk in a bowl with a wire whisk and slowly add oil, drip by drip, beating steadily. As it thickens naturally, add oil faster in a thin stream until all is blended and the mayonnaise is thick and golden. Stir in sea salt and lemon juice. This takes less than a minute and is so delicious that you will be tempted to eat all of it with a spoon! P.S. Mustard, garlic powder, etc. are not needed and muddy the taste.

Won't you cook the egg yolk? And do you have to refrigerate it?

@@user-ti1tk2fu3h The yolk is eaten raw, and, yes, if you keep it, it should be refrigerated. But the idea is not to make enough to keep - just enough for what you want right away.

Love Greek yogurt, I'd just as soon make tzitziky. With cucumber. Instead of a fake mayo. Egg and oil mayo is perfectly healthy. Use light olive oil or avocado oil. The calories and fat from eggs are the best you can get, that's why it's the best food for babies...

I like to use sour cream or light sour cream. I also add olive oil and lemon and dried mustard, but prepared mustard is nice for the vinegar, so usually both. Then season.

I have been looking for a healthy and easy recipe for mayonnaise since most of the commercial mayo have bad oils, high fructose corn syrup, and things you can't pronounce... The "healthy " ones are expensive and usually close to expiration date AND they taste rancid at best. I am ecstatic to find this recipe! I will add a bit of raw honey and organic paprika! YES!!! Thank you for rescuing my favorite dish which was waiting for the perfect mayonnaise!!!

I really do like mayo and I especially like the Avocado Mayo from Primal. I will soon be trying the Chosen Avocado Mayo brand. But I love the idea of this yogurt version of Mayo. I could absolutely live with that as well!

What I like about this is that it does not require a seed oil, like Sunflower oil. You cannot make an egg mayonnaise with olive oil, the taste is disgusting. But Sunflower oil, like all seed oils but sesame, is very high in Omega-6, which is very inflammatory. I'm glad to reminded of a way out - I used to make all my mayo with yoghurt, but then I drifted away - but it was always quick to make and delicious. I'll be going back to it. Thank you.

Try Light Olive Oil It has the same amount of monounsaturated fats as regular grassy Olive Oil and is practically tasteless

Mayo isn't bad because of fat. It's bad because almost all brands use soybean oil aka "vegetable" seed oils that are very bad for you. If you make your own mayo out of olive oil or avocado oil, it is fine.

Exactly! Homemade mayo is a great option, but olive oil mayo is too strong for my taste and avocado oil I don't even buy, it's too expensive here.

80% of mayo is oil, how it's not bad? Olive oil is still oil. They are both bad, the difference is that seed oil is worse

Your greek yoghurt has pretty wild macros compared to greek yoghurts I find in the store. That extremely low fat and extremely high protein for greek yoghurt is quite interesting.

Mayo doesn't have to be unhealthy. I make mine with avocado oil and organic egg yolks which are a powerhouse of nutrition. Yogurt will never give food the same taste and with added vinegar it's too sour. I prefer the real things as long as it's made with right ingredients

I heard that you can overcome your lactose intolerance by supplementing your biome( bacteria in the stomach) with fermented foods like sauerkraut, kefir and kombucha and the like. I think I heard that on Dr Berg's videos. I thought I let you know.

Greek yoghurt is low in lactose, just like hard chees and can be eaten by nearly everyone. The little bit of lactose that is still in there is already being broken down before you buy it. But there are also lactose free yoghurts around, so you can still try it.
