Really nice recipe, at the end of the chicken cooking, usually you sprinkle in a little crushed, dried kasuri methi (fenugreek/methi) leaves and that’s the defining flavor of butter chicken.

Yom. I would have seared the seasoned thighs whole and after they cooked then cut them smaller to simmer in the sauce. That way less pieces of chicken to deal with in the pan(s) initially.
