Turkey on the grill is a beautiful thing, and in this video I spatchcock (it’s fun to say that) a 12 pound Turkey, dry brine it overnight in the refrigerator, inject it before putting it on the Weber Kettle, and glaze it near the end of its time on the grill to develop a rich mahogany color. The results are a beautiful, juicy, tender bird that everyone is going to love.
Turkey Seasoning Ingredients
1 TBSP Kosher Salt
1 TBSP Cracked Black Pepper
1 TBSP Granulated Garlic
2 tsp Poultry Seasoning
Injection Ingredients
½ cup Avocado Oil
1 TBSP Balsamic Vinegar
2 TBSP BBQ Sauce
1 tsp Dry Rub (finely ground)
Glaze Ingredients
½ cup Honey

Here’s a few recommendations for doing spatchcock. First score the bird on both sides of the spine with a sharp knife, then use your shears along those lines. Because poultry skin is rubbery, your shears will find their way to cut more easily through the flesh and bones along the spine. Second, while using your shears, make short cuts through those rib bones with the front of the shears, not the very end. This will give you more steady and powerful cuts, especially if you’re cutting through a turkey. Third, after removing the spine, press your sharp knife into the cartilage at the top of the breast inside the bird. Now press the bird back on your table with both hands, and the breast will naturally crack open. Lastly, if you want, you can now remove that breast bone by carefully shaving away the flesh on it and pulling it up and out. This last step will allow you to more easily split the bird apart after it’s finished cooking. Cheers!

This video was very timely for me, as I want to do a turkey on my Weber Performer grill. It will be the first time I'll be doing one on my Weber. Man oh man! Turkeys are my absolute favorite thing to cook. Yours looked awesome. I'm also a proponent of injecting over wet brining. I really liked the way you cooked it on top of the onions, peppers and carrots. That neck skin is my favorite part to taste test too. Eating it before you carve it is a pitt master privilege. I love what you said about competitions, I'm just fellow who likes to cook too. Some say barbeque is sport, others science, but I think it's art. I just like to create it, not compete with it , nor study it.

Looked great, Ry. I'm a little late to this video, but I've had some hunting to do and an entire Thanksgiving dinner to cook. You gave a very good tip about finished meat temperature being very important. I don't think I've ever paid over maybe $1.19/lb for a whole turkey, but they have always been very good - UNLESS the white meat hits much above 170 degrees. At that point, it starts morphing into something resembling a pressed-wood product. Hope you had a nice Thanksgiving.

Ry, I followed this video when doing my Turkey today. At least the spatchcocking and using my Weber Kettle and I basted half of it with your mix (honey and bbq). But, I used BBQ Pit Boys brine recipe (Apple cider, etc) and let it sit in that overnight. The turkey came out great and was delicious, even though I messed up and didn't add charcoal in time and temp dropped. Took a little longer but the end result was good. Thanks for video. Ron

I looove love love grilling turkey. When ever me and my husband found out you could do that about 5 years ago, we haven't made it any other way. I never heard of injecting a turkey though. o.O We always brine the turkey over night. I've always found that if I don't brine, it always comes out dry (before I figured out grilling it), but when I brine, even if I don't grill it, it always comes out super moist. I love grilling it though because that skin comes out amazing and it kind of helps hold in the moisture of the bird. You're turkey looks amazing too!! Keep up all the awesome work!

That looks amazing! I cook a lot on PBC and cook turkey quite often. I seem to get rubbery skin on the legs. I'm going to try the dry brine and give that shot. What would be better hanging it, laying flat or does it matter ? Thanks for great video.

I find that spatchcocking and cooking flat does help the skin dry nicely over the entire bird :)

Nice cook Ry. That bird was juicy and tender looking. I cooked a 12# on the Bronco @ 350 for 2 1/2 hours. I have a turkey beer can cooker but I did like you. I split that sucker and opened him up. I'm paying attention as & the wife could not believe it ; I made me a glaze and at hour 2 gave that Tom a bath. Lord help me as I was doing that I said to myself "Ry would be proud that I'm stepping out of the box." Nice cook and always great Video.

Great recipe. If you ladle about 1 gallon of boiling water on the skin and then dry brine over night the skin will come out crispy and delicious after cooking. The boiling water breaks down the fat in the skin that makes it crisp while cooking

One is wireless and the other a wired backup. Always gotta have a backup :)

You could definitely do it. I've done turkeys hanging on the PBC a number of times so a spatchcocked bird should be just as easy :)
