Smoking Chickens on the Drum Smoker has become my go-to method for cooking incredibly juicy and flavorful birds. Using the Hunsaker Vortex Drum Smoker and my SPSPG Rub, I break down a pair of chickens into halves and bathe them in Cherry Wood Smoke for just over an hour and the results are absolutely fantastic.

Ty Ry. you were the reason i got my first Hunsaker. Now i have 4 i stainless built with there kits my stainless happy place with lump is 400 wings and thighs Ooooh my if anyone is thinking about a drum i recommend the hunsaker built or kits with ease of cooking……

Before using shears, I always score the skin with a sharp knife along the spine and this allows the shears to cut through much easier.

Great video, as usual, Ry. You influenced my drum purchase-I love my Hunsaker. I know that I need to cook to temperature, not time, but knowing how long this cook took will help me time the sides to finish when the chicken does.

Usually for chickens like this I find it’s around 2 1/2 hours.

I have really been considering getting a Hunsaker drum solely based on watching your videos. I really like the vortex diffuser and some of the other features.

Looks wonderful, Ry. Have you noticed what you'd consider as a constant, the difference between the stack-mounted thermometer and a Smoke grill probe?

They are actually very close. 5-10 degrees usually.

I purchased a Hunsaker about a month ago and really enjoy using it. It's almost too easy once the vents are set. When you bottom light it and put the wood on top, how long does it take for the wood to smolder? I have been just dumping a small Weber chimney on top but like your method better.

I find it usually takes about 20 minutes, which is right around the time I'd put food on after letting the burn settle in :)

Watching this while eating a chicket roll that I smoked on my Weber =). What was your smoker temp when you maxed it out? My Weber got to about 285 and that wasn’t enough to get crispy skin.

It topped out at about 425 I believe after I opened the vents. I think I mentioned it somewhere in the video 😊

I’m going to do this with my PBC and crack the lid around 120. Btw, how will you serve the chicken? Cut it all up, or let everyone help themselves?

I usually break it down into leg quarters and then break each half breast into two pieces 😊

I actually just gave my PBC to a friend because the Hunsaker is more versatile. But the PBC puts out great food.
