Hot Chicken Recipe
Salt and pepper enough chicken the fill your frying pan.
Let it rest in the fridge over night, then make a wash to cover the
chicken.
Wash: 1 & 1/2 cups of buttermilk and 1/2 cup half & half.
Add 1/2 cup of pickle juice. 2 whole eggs, 1/4 cup Louisiana Hot Sauce... Mix well and pour over chicken, and put it back in the
fridge for 2 to 4 hours. (Overnight is OK as well)
Make a dry mixture of 1 & 1/2 cups all-purpose flour and 1/2
cup of corn starch. Also, add 1/2 tsp. sage, 1/2 tsp. basil, 1/2 tsp. oregano, 1 tbsp. paprika. Mix and set aside.
Sauce to pour over your chicken when done!
I kept adding stuff until I got this!...
Heat over low heat! :
1/2 cup of your fryer oil, 3/4 stick of butter, 2 tbsp. lard,
1 tsp. garlic powder, 1/2 tsp. salt and 1 tsp. black pepper.
1 heaping tbsp. brown sugar, 3 tbsp. cayenne pepper,
1 tbsp. paprika, mix well, and set aside... heat up later!
Take chicken out of your egg and milk bath and shake off
excess... dredge your chicken in the flour then in the wash
then back in the flour! (double-dip)
Repeat with all pieces, then let the chicken rest for 15 minutes
before frying. You can refrigerate the chicken during this 15
minutes or not. Because it sat in salt all night it is safe to set
for 15 minutes at room temp.
Fry the chicken in hot oil between 325 and 350 degrees.
Turn often to prevent burning until the internal temp is 165!
Remove and let rest on a rack for 5 minutes then serve on
a piece of white bread and drizzle the hot sauce all over the chicken. Put pickle chips on top, (I like bread and butter)
This recipe takes a while to make, but it is Great!

Was looking for a good Nashville hot chicken recipe and this was the only accurate one I could find, I literally looked all over the internet. This guy was an awesome old fashioned cook I can tell, what a cool dude. And from the comments I see he was apparently a great guy. I’m sorry for anyone affected by his passing, may he Rest In Peace ❤️

If ur ever in Hollywood check out the Burger Factory fried chicken. Its the best i ever had but ask for really crispy with their salsa. Its $ 6.50 for 3 pieces of chicken a salad fries or onion rings and a piece of Texas toast. If you like shotguns food you will love this

Oh...and I meant to add...when I call myself making fried chicken, my bowl of flour mixture AND my fingers always end up CAKED with chunks of wet flour! :'( I kept noticing your fingers, gloved or not, always had very little gunk on em.

Why do ppl use Paprika?? It doesn’t taste like anything. I was told, long ago, it’s just a garnish or for color, like on deviled eggs??

Paprika is a red spice made from dried bell peppers that have been ground into tiny particles. While many people typically think of Hungarian foods when they think of the spice - there are many European countries that use the seasoning regularly to both color and flavor foods. It is added to soups and stews, sprinkled over the tops of meats, or forms part of many grilling rubs or seasonings. Paprika is also a common ingredient in sausages.
