I tried this for the first time today, and it turned out very well. I added one 13 Oz container of drained, extra hot New Mexico Green Chili because New Mexico. It gives it an extra kick. Try it next time.

This was really good. We had left-overs and it occurred to me that this would make a great burrito filling. So we added some black beans and more cheese and wrapped it in a large flour tortilla and heated it in the microwave. Some guacamole and pepper sauce on top and it was fantastic. Thank you for the recipe!!

Its interesting Ive done this recipe before and the only reason i did it was I didnt want to stuff and bake the peppers. Love the cheese idea! If you want it a little more over the top in flavor put one of those small cans of tomato paste in it if you really like that tomato flavor.
